Yield 8 burritos

Number Of Ingredients 9

1 lb. ground beef
1 pkg. Knorr Rice Sides, cheddar broccoli flavor
2 cups water
1 can (15 oz.) red kidney beans, drained and rinsed
8 10" flour tortillas
1 jar (16 oz.) salsa, divided
1 cup (4 oz.) shredded cheddar cheese
2 green onions, thinly sliced
1/4 cup chopped cilantro (optional)

Steps:

  • Preheat oven to 350F. Cook ground beef in 12" skillet over medium-high heat, stirring occasionally, until beef is done, about 5 minutes. Remove beef mixture and set aside. Stir Knorr Rice Sides, water, and beans into same skillet and bring to a boil over high heat. Reduce heat to medium and cook covered 7 minutes or until rice is tender. Stir in beef. Remove from heat and let stand 2 minutes. Stirin 1/2 cup salsa and 1/2 cup cheese. Spoon about 3/4 cup rice mixture onto each tortilla; roll-up. Evenly spread 1/2 cup salsa in bottom of 13" x 9" greased baking dish. Arrange burritos, seam-side down. Spoon remaining salsa down center of burritos, then sprinkle with remaining 1 cup cheese. Cover tightly with aluminum foil (spray inside of foil with cooking spray) and bake 60 minutes or until heated through. Garnish with green onions.

Tips:

  • Choose the right beef: Flank steak or skirt steak are great options for this recipe, as they are both flavorful and tender when cooked quickly.
  • Slice the beef thinly: This will help it cook evenly and quickly.
  • Marinate the beef: This will help it absorb flavor and become even more tender.
  • Cook the beef in a hot pan: This will help to sear the outside and keep the inside juicy.
  • Don't overcook the beef: Beefy broccoli cheddar burritos are best when the beef is cooked to medium-rare or medium.
  • Use fresh broccoli: Fresh broccoli has a better flavor and texture than frozen broccoli.
  • Shred the cheddar cheese: Shredded cheddar cheese melts more easily than block cheddar cheese.
  • Use large tortillas: Large tortillas will hold all of the ingredients without breaking.
  • Serve the burritos with your favorite toppings: Sour cream, guacamole, salsa, and pico de gallo are all great options.

Conclusion:

Beefy broccoli cheddar burritos are a delicious and easy-to-make meal that is perfect for busy weeknights. They are also a great way to use up leftover beef. With a few simple ingredients and a little bit of time, you can have a delicious and satisfying meal that the whole family will love.
