Steps:
- To make the filling, heat the oven to 160C/140C fan/gas 3. Heat half the oil in a large casserole dish, brown the meat really well in batches, then set aside. Add the onions adding a drizzle more oil, then cook on a low heat for 5 mins until coloured.
- Scatter over the flour, stirring until the flour turns brown. Tip the meat and any juices back into the pan along with the ketchup and give it all a good stir. Pour over the stock, season, and bring to a simmer then cover with a lid and put in the oven for about 2 hrs, until the meat is tender. The filling can be made up to three days ahead and chilled or frozen for up to three months.
- To make the pie, heat the oven to 220C/200C fan/gas 7. Tip the filling into a 24-26cm rimmed pie dish and brush the rim of the dish with some yolk. Unravel the pastry, drape over the dish and use a knife to trim and press the edges against the side of the dish. Re-roll your trimmings to make a decoration if you like. Brush the pie heavily with egg yolk. Make a few little slits in the centre of the pie and bake for 40 mins until golden. Leave to stand for a few minutes before serving.

Steps:
- In a large bowl combine the roast beef, the peas, and the potatoes.
- In a skillet cook the onion in the 1 tablespoon butter over moderately low heat, stirring occasionally, until it is softened.
- Add the garlic, and cook the mixture for 3 minutes.
- Stir in the Worcestershire sauce, horseradish, and cream and cook, stirring until thickened.
- Add the sauce to the roast beef mixture, season with salt and pepper, and combine well.
- Divide the mixture among the six 1 1/2 cup gratin dishes.
- Pour the melted butter around the edges of the gratin dishes and heat the potpies in the middle of a preheated 450°F, oven for 2 minutes.
- Pour 1/3 cup of the Yorkshire pudding batter around the edge of each gratin dish and bake the potpies for 15 minutes (do not open the oven door).
- Reduce the heat to 400°F and bake the potpies for 10 to 15 minutes more, or until the pudding is puffed and browned.
- Make the Yorkshire pudding batter.
- In a blender blend the eggs, salt, flour, and milk for 30 seconds and chill, covered, for 30 minutes.
- In a small bowl beat the egg white until it forms soft peaks and fold it into the mixture.
Tips:
- Choose the right cut of beef. For a classic beef Yorkshire pie, use a chuck roast or braising steak. These cuts are tough but flavorful and will become tender when cooked slowly in the oven.
- Brown the beef before stewing it. Browning the beef adds flavor and color to the pie. Be sure to brown the beef in batches so that it doesn't steam.
- Use a good quality stout. The stout adds a rich, malty flavor to the pie. Choose a stout that you enjoy drinking.
- Don't overfill the pie crust. The filling should come up to the top of the crust, but it shouldn't be overflowing. Otherwise, the pie will be difficult to seal and the filling will bubble over.
- Bake the pie at a high temperature for the first 30 minutes. This will help to create a golden brown crust. Then, reduce the temperature and continue baking until the filling is bubbling and the crust is cooked through.
Conclusion:
Beef Yorkshire pie is a classic British dish that is perfect for a hearty meal. The combination of tender beef, rich stout gravy, and flaky pastry is sure to please everyone at the table. With a little planning and effort, you can easily make this delicious dish at home.
