1 head lettuce ((Bibb, Boston, and butter are great choices))
1 lb lean ground beef
1/2 cup brown sugar ((or less to decrease sweetness))
1/4 cup soy sauce or tamari
1 tbsp sesame oil; divided in half
3 cloves garlic; minced/grated
1/4 tsp . ground ginger
1/8 tsp . red pepper flakes ((optional and to taste))
1 bunch green onions; divided between white and green parts
3 tbsp rice wine vinegar
Sesame seeds for garnish ((optional))

Steps:

  • Whisk in a bowl the brown sugar, soy sauce/tamari, 1/2 tbsp sesame oil, garlic, ginger, rice wine vinegar, and red pepper flakes until blended; set aside.
  • In a wok or large skillet, brown the ground beef in 1/2 tbsp sesame oil.
  • Add the white part of the green onions to the beef and continue cooking until the beef is done.
  • Drain any rendered fat.
  • Pour the sauce over the meat and allow it to reduce down; about 3-5 minutes.

1/2 cup reduced sodium soy sauce
1/4 cup brown sugar, packed
1/4 cup chopped green onions
4 cloves garlic, minced
2 tablespoons sesame oil
2 tablespoons freshly grated ginger
2 tablespoons freshly grated pear, optional
1 teaspoon Sriracha, optional
1 1/2 pounds hanger steak, cut into 1-inch pieces
1 cup white rice
1 head butter lettuce
1/2 teaspoons sesame seeds

Steps:

  • In a medium bowl, whisk together soy sauce, brown sugar, green onions, garlic, sesame oil, ginger, pear and Sriracha, if using. Reserve 1/4 cup and set aside. In a gallon size Ziploc bag or large bowl, combine soy sauce mixture and steak; marinate for at least 1 hour to overnight, turning the bag occasionally. Drain the steak from the marinade. In a large saucepan of 2 cups water, cook rice according to package instructions; set aside. Preheat grill to medium high heat. Add steak to grill and cook, flipping once and basting with reserved 1/4 cup marinade until cooked through, about 1-2 minutes on each side. 1 pound ground beef, preferably grass-fed and organic
3 cloves garlic, minced
3 scallions, white part only, thinly sliced
1-inch piece ginger, minced
1/2 cup soy sauce
3 tablespoons gochujang (Korean red chile paste)
1 tablespoon honey
4 teaspoons sesame oil
1 1/2 cups short-grain white rice
1 1/2 tablespoons avocado oil
Sliced cucumber, for serving
1 head butter lettuce, separated into whole leaves

Steps:

  • For the beef: Add the beef to a medium skillet over medium-low heat. Cook, breaking up with a wooden spoon and slowly rendering the fat, 8 to 10 minutes. Using a large spoon remove half of the rendered fat and discard. Add the garlic, scallions and ginger and cook an additional 2 to 3 minutes. Set aside.

1/4 cup onion, peeled and pureed

Steps:

  • Combine first 9 ingredients (soy - black pepper).
  • Slice the steaks across the grain into thin slices.
  • Place beef in resealable ziplock bag and pour soy mixture over. Let marinate in refridgerator for 2-12 hours, turning bag occoationally.

1/2 teaspoon salt
1 tablespoon sesame oil

4 scallions, 2-inch long julienne strips

2 teaspoons sesame oil
1 -3 teaspoon cayenne chili powder
1 teaspoon sugar
1 tablespoon toasted sesame seeds
10 -12 large lettuce leaves (I recommend Boston lettuce)
3 garlic cloves, sliced thinly

  • Cut the steak into thin slices 3 inches long and 2 inches wide. This can be done easily if the steak is half frozen. Mix the steak with salt, 1 TB sesame oil and the pepper; put seasonings into the meat. Set aside for 15 minutes.
