MAMA'S BEEF TIPS AND GRAVY

Mama's Beef Tips and Gravy image

I am always on the go and most of my cooking, when I cook, is for a crowd. This recipe is so easy and so delicious. Can be roasted in the oven or cooked in a crockpot (I have 9 crockpots!!). It's Southern comfort food at its finest. Serve it over rice, but homemade mashed potatoes are the best accompaniment, along with my Stir...

Provided by Debbie Quimby

Categories     Beef

Number Of Ingredients 5

2 lb sirloin tip roast
2 pkg onion soup mix
2 can(s) cream of chicken soup
1 can(s) cream of mushroom soup
1 1/2 c water

Steps:

  • 1. Cut roast into cubes (Hint: if roast is slightly frozen, it's easier to cut into cubes).
  • 2. Place cubed sirloin tips in a pot (cast iron is Mama's favorite method but any oven-proof pot will do).
  • 3. Sprinkle soup mix over the sirloin tips. Combine soups with water and pour over the top.
  • 4. Bake at 350 degrees for 2-3 hours. Serve over rice, noodles, or mashed potatoes (my favorite).
  • 5. Note: you can make these in a crockpot if you prefer. Cook on low for several hours and test the meat by spearing it with a fork. If it's falling apart, it's ready!
  • 6. Another note: you could use sirloin tips that are already cut into cubes but it's generally cheaper, if you don't mind the extra work, to buy a sirloin tip roast and make your own.

Number Of Ingredients 10

1 tablespoon butter, or to taste
1 pound beef stew meat, cut into 1/2 inch pieces
2 (10.75 ounce) cans cream of mushroom soup
2 ½ cups milk
salt and ground black pepper to taste
4 potatoes, peeled and cubed, or more to taste
¼ cup butter, or to taste
¼ cup milk, or to taste

Tips:

  • To ensure the beef tips are tender, opt for a cut of meat labeled "stew meat" or "chuck roast." These cuts are known for their rich flavor and ability to become fall-apart tender when cooked slowly.
  • Invest in a good quality Dutch oven or heavy-bottomed pot. This type of cookware will distribute heat evenly and prevent the beef tips from burning.
  • Don't overcrowd the pot when browning the beef tips. If you add too much meat at once, it will steam rather than brown. Work in batches if necessary.
  • Be patient when simmering the beef tips. The longer you cook them, the more tender they will become. Aim for at least 1 hour, or up to 2 hours for extra tender beef.
  • Don't forget to season the gravy! A simple combination of salt, pepper, and garlic powder is a good starting point. You can also add herbs like thyme or rosemary, or a splash of red wine or Worcestershire sauce.
  • Serve the beef tips and gravy over mashed potatoes, rice, or egg noodles. You can also add a side of vegetables like green beans or carrots.

Conclusion:

Beef tips and gravy is a classic comfort food that is easy to make and always a crowd-pleaser. With a few simple tips, you can create a delicious and satisfying meal that your family and friends will love. So next time you're looking for a hearty and flavorful dish, give this recipe a try!
