1 can (14.5 oz) diced tomatoes, undrained

Time 2h

Yield 4-6 serving(s)

Number Of Ingredients 16

2 lbs beef stew meat
3/4 teaspoon salt (or more according to your taste)
1 teaspoon turmeric
2 tablespoons vegetable oil
2 small onions, finely chopped
5 garlic cloves, minced
1 teaspoon ginger, minced
1 teaspoon cumin
2 teaspoons curry powder
1 tablespoon coriander
1 tablespoon paprika
1 teaspoon cayenne pepper
1 teaspoon cardamom
1 tablespoon fresh cilantro
2 large sweet potatoes, peeled, diced into 1/2 inch pieces
4 cups water

Steps:

  • In a bowl, mix beef, salt and turmeric. Heat oil in a pot on medium heat.
  • Add onion, garlic and ginger and saute 3 minute
  • Add the beef mix and spices and saute 5 minute
  • Add the water, cover and simmer until beef tender.
  • Add potatoes and simmer another 20 minute.
  • Serve over top of rice or as a stew with Nana bread.
  • Note: If your curry is a bit on the bitter side, add a pinch of sugar (or more to your liking) when adding the sweet potatoes.

Tips:

  • Prep your ingredients: Dice the beef, sweet potatoes, and onions into uniform pieces for even cooking.
  • Use a large pot or Dutch oven: This will give you plenty of room to stir and cook the ingredients without overcrowding.
  • Brown the beef: Browning the beef adds flavor and helps to prevent it from becoming tough.
  • Add the aromatics: Onions, garlic, and ginger add depth of flavor to the curry. Cook them until they are softened and fragrant.
  • Use a good quality curry powder: Curry powder is the key ingredient in this dish, so choose one that you like the flavor of.
  • Add the coconut milk and broth: Coconut milk adds a creamy richness to the curry, while broth helps to thin it out and add flavor.
  • Simmer until the beef and sweet potatoes are tender: This will take about 30 minutes.
  • Stir in the spinach: Spinach adds a pop of color and nutrients to the curry.
  • Serve with rice or naan: Curry is traditionally served with rice or naan, which are both great for soaking up the flavorful sauce.

Conclusion:

This beef and sweet potato curry is a delicious and easy-to-make weeknight meal. It's packed with flavor and nutrients, and it's a great way to use up leftover beef. Serve it with rice or naan and a side of your favorite chutney or raita.
