CROCKPOT BEEF HEART STUFFED WITH BACON, MUSHROOMS AND ONIONS. RECIPE - (4/5)

Crockpot beef heart stuffed with bacon, mushrooms and onions. Recipe - (4/5) image

Provided by á-170684

Number Of Ingredients 9

1 grass fed beef heart (you can use deer heart)
garlic (as much as you like)
1 onion, chopped
1 leek, chopped
2 cups beef broth + 1/3 c.
1/4 cup olive oil
6 to 10 slices of bacon (thick cut if you can)
8 oz. of fresh mushrooms (please don't use canned mushrooms. fresh is so much better)
olive oil

Steps:

  • Cook the bacon. Remove from pan and rough chop. Healthy saute the mushrooms, garlic and onions in a frying pan with 1/3 c. beef broth. Add bacon to the mix when veggies are cooked. Clean the heart by trimming off most of the fat and any obvious arteries from the outside. Then stuff all of the frying-pan ingredients into the heart cavity. Really stuff it full and then use toothpicks -- the longer the better -- to hold it together. You can also using cooking twine. Put the stuffed heart in the crock pot along with the broth and olive oil and some more garlic. Cook for 11-12 hours on low. Don't skimp on the cooking time, or else you risk ending up with tough rubbery meat. Mine turned out pretty fantastic. The heart sometimes falls apart because it is so juicy and tender.

Number Of Ingredients 12

1/4 cup dried porcini mushrooms (soaked in warm water)
500 g beef mince
1 onion (finely diced)
2 teaspoons garlic (minced)
1/2 cup dried breadcrumbs
1 egg
1/4 cup parsley (flat-leaf chopped)
salt
pepper (freshly ground)
4 field mushrooms (large or 8 smaller ones)
2 tablespoons olive oil
1/2 cup white wine

Steps:

  • Soak porcini mushroom in warm water.
  • Preheat oven to 200°C.
  • Drain the mushrooms once softened, reserving the soaking water, roughly chop mushrooms.
  • Combine the mince, onion, garlic, chopped mushrooms, breadcrumbs, egg, parsley, salt and pepper in a bowl and mix well.
  • Remove the stems from the field mushrooms and mound the mixture onto the caps, giving a rounded top, place onto a baking pan.
  • Drizzle over the olive oil and bake in a 200C oven until browned - about 25 minutes for large mushrooms.
  • Remove the mushrooms from the oven, and keep warm.
  • Put the soaking liquid, wine and pan liquid/sediment from the baked mushrooms into a small pot and over a medium heat boil and reduce by half.

Tips:

  • Choose the Right Mushrooms: Select large, firm mushrooms with intact stems. Portobello, cremini, and shiitake mushrooms are excellent choices.
  • Clean and Prep the Mushrooms: Gently wipe the mushrooms with a damp paper towel to remove dirt. Remove the stems and finely chop them for the stuffing.
  • Make a Flavorful Stuffing: Combine ground beef, sautéed onions, garlic, herbs, breadcrumbs, and seasonings to create a savory stuffing.
  • Stuff the Mushrooms: Fill the mushroom caps generously with the prepared stuffing, pressing it down gently.
  • Bake or Broil: Depending on your preference, you can bake the stuffed mushrooms in a preheated oven or broil them until the tops are golden brown and the stuffing is cooked through.
  • Add Cheese: For an extra layer of flavor and richness, top the stuffed mushrooms with grated Parmesan or mozzarella cheese before baking or broiling.
  • Serve Hot: Stuffed mushrooms are best served hot as an appetizer or a main course. Garnish with fresh herbs for an elegant touch.
