This recipe was handed down to me by a Korean friend. So full of flavor! I wanted to share it with you all. I did tweak it a little to add more spice. Feel free to tweak it yourself!

1 (3 pound) beef chuck roast, trimmed
½ onion, diced
½ cup dark brown sugar
⅓ cup soy sauce
10 cloves garlic
1 jalapeno pepper, diced
1 (1 inch) piece fresh ginger root, peeled and grated
2 tablespoons seasoned rice vinegar
1 tablespoon sesame oil
salt and ground black pepper to taste
16 (6 inch) corn tortillas

Steps:

  • Put chuck roast into the crock of a slow cooker; add onion, brown sugar, soy sauce, garlic, jalapeno pepper, ginger root, rice vinegar, sesame oil, salt, and pepper.
  • Cook on High for 8 hours (or on Low for 10 hours). Shred meat with a pair of forks and stir into the liquid in the slow cooker.
  • Serve with corn tortillas and your favorite toppings.

2 tablespoons flour
3/4 teaspoon salt
1/4 teaspoon dried onion flakes
1/4 teaspoon paprika
1 1/2 teaspoons chili powder
1 dash garlic powder
1 dash onion powder
1/4 cup water
5 small tortillas
lettuce
shredded cheese
sour cream
tomatoes, diced

Steps:

  • In a medium bowl combine the beef with the flour, salt, minced onion, paprika, chili powder, garlic powder and onion powder Use your hands to mix evenly.
  • Heat skillet to med/low heat.
  • Add beef mixture and water to the pan.
  • Brown the beef, breaking it up as it cooks.
  • Heat the tortillas in the microwave, wrapped in damp paper towels.
  • Spread meat into tortillas, top with cheese, tomatoes, lettuce and sour cream.

2 teaspoons chili powder
1-½ teaspoons ground cumin, divided
1 can (15 ounces) reduced sodium black beans, rinsed, drained, divided
1 tablespoon vegetable oil
8 small corn or flour tortillas (5 to 6-inch diameter), warmed
Thinly sliced lettuce, sliced avocado, chopped tomato, salsa, crumbled queso fresco and cilantro leaves (optional)
1 pound beef Bottom Round Steaks, cut ¼ inch thick

Steps:

  • 1.Combine ½ cup salsa, chili powder and 1 teaspoon cumin. Place beef steaks and marinade in food-safe plastic bag; turn to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight, turning occasionally.
  • 2.Combine 1 cup beans, remaining ½ cup salsa and ½ teaspoon cumin in medium microwave-safe bowl. Mash with fork into chunky paste. Cover and microwave on HIGH 1 to 2 minutes or until hot, stirring once. Keep warm.
  • 3.Meanwhile, heat 1-½ teaspoons oil in large nonstick skillet over medium-high heat until hot. Remove steaks from marinade; discard marinade. Cooking in batches, place steaks in skillet (do not overcrowd) and cook 2 to 3 minutes for medium rare (145°F) doneness, turning once. (Do not overcook.) Remove steaks from skillet; keep warm. Repeat with remaining steaks and oil.
  • 4.Spread bean mixture evenly on tortillas. Cut steaks into 4 pieces each and divide evenly among tortillas. Top beef with remaining beans and toppings, as desired. Fold tortillas in half to serve.

1 1/2 pounds boneless beef chuck, cut into 3/4-inch cubes
1 cup bottled chunky medium-hot salsa
1/4 cup canned beef broth
2 tablespoons chopped garlic
2 tablespoons (packed) dark brown sugar
1 tablespoon soy sauce
1/4 cup chopped fresh cilantro
1 tablespoon fresh lime juice
12 6-inch-diameter corn or flour tortillas

Steps:

  • Place eggplant slices on 2 baking sheets. Lightly salt eggplant on both sides. Let stand 1 hour. Drain on paper towels, pat eggplant dry, wiping off salt.
  • Heat oil in heavy large pot over medium-high heat. Sauté half of beef until brown, about 3 minutes. Using slotted spoon, transfer beef to bowl. Sauté remaining beef until brown, about 3 minutes. Return all beef to pot. Add salsa, broth, garlic, sugar and soy sauce; bring to boil. Reduce heat to medium-low, cover and simmer until beef is tender, stirring often, about 1 hour 10 minutes.
  • Uncover pot and simmer stew until sauce thickens, about 5 minutes. Mix in cilantro and lime juice. Season with salt and pepper. (Can be made 2 days ahead. Refrigerate until cold, then cover and keep refrigerated. Rewarm before continuing.)
  • Heat tortillas 1 at a time on stove burner, about 10 seconds per side, turning with tongs. Cover with towel to keep warm.
  • Serve stew with tortillas, allowing diners to assemble tacos.

1 Old El Paso™ restaurante beef carne asada soft taco dinner kit
1 ripe avocado, pitted, peeled and mashed
1 tablespoon water
1 tablespoon lime juice or white vinegar
2 tablespoons vegetable oil
1 lb whole beef sirloin steak (3/4 to 1 inch thick)
Chopped onion
Chopped fresh cilantro
Chopped tomato
Fresh lime wedges

Steps:

  • In small bowl, stir Guacamole Seasoning (from dinner kit) into mashed avocado until well blended. Press plastic wrap onto surface of guacamole, and refrigerate. Stir again before serving.
  • In medium bowl, stir Beef Seasoning (from dinner kit), water, lime juice and 1 tablespoon of the oil. Dip whole steak (unsliced) into seasoning mixture until well coated on all sides.
  • In 10-inch nonstick skillet, heat remaining 1 tablespoon oil over medium heat. Carefully add whole steak to hot oil. Cook 2 to 3 minutes on each side. Surface of steak will be charred in spots. Remove skillet from heat, and let steak rest in skillet 5 minutes to allow juices to settle.
  • Transfer steak to cutting board, leaving juices in skillet. Cut across grain into thin strips. Return steak strips to skillet, and combine with steak juices. Cook steak strips over medium-high heat 1 to 2 minutes or until desired doneness.
  • Remove Tortillas (from dinner kit) from bag. To heat in microwave, place stack of tortillas on microwavable plate. Cover with microwavable waxed paper. Microwave on High 45 to 60 seconds or until warm. (To heat in oven, wrap tortillas in foil; place on cookie sheet. Bake at 325°F about 10 minutes or until warm.)
  • Spoon steak strips onto tortillas. Top with guacamole, desired toppings and a squeeze of fresh lime juice. Cover and refrigerate leftovers.

3 cups chopped sweet onions or 3 cups yellow onions
1 cup chopped green bell pepper
2 fluid ounces dry red wine (regular or nonalcoholic)
4 ounces reduced sodium ketchup
2 tablespoons cider vinegar
6 garlic cloves, minced or 1 tablespoon instant minced garlic
2 teaspoons low-sodium beef bouillon cubes
2 bay leaves
3/4 teaspoon liquid smoke
1 teaspoon ground cumin, divided
1/2 teaspoon red hot pepper sauce
1/4 teaspoon pepper
1 teaspoon dark brown sugar or 1 teaspoon light brown sugar
64 inches fat-free flour tortillas or 8 low-fat flour tortillas

Steps:

  • Put meat in slow cooker.
  • Add onions and bell pepper.
  • In a medium bowl, whisk together wine, ketchup, vinegar, garlic, bouillon granules, bay leaves, liquid smoke, ½ tsp cumin, hot pepper sauce and pepper.
