3-1/2 cups uncooked egg noodles
1 pound lean ground beef (90% lean)
1 small onion, chopped
1 can (10-3/4 ounces) condensed nacho cheese soup, undiluted
1 cup mild salsa
1/2 cup water
1 teaspoon taco seasoning
1 cup shredded Monterey Jack cheese

Steps:

  • Cook egg noodles according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat 6-8 minutes or until meat is no longer pink, breaking into crumbles; drain. 1/4 cup diced onion
1/2 cup chopped green bell pepper
1 teaspoon chili powder
1/4 teaspoon pepper

1 (14 ounce) can diced tomatoes
1 (14 ounce) can corn
1 beef bouillon cube
1 cup water
1 cup Minute Rice (uncooked)

Steps:

  • Dissolve the beef boullion cube in the 1 cup of water.
  • Brown beef and drain.
  • To the beef, add onion, green pepper, seasonings, tomatoes, corn, and bullion with water.
  • Bring to a boil.
  • Stir in rice and remove from heat.
  • Cover.

1-1/2 cups biscuit/baking mix
1-1/2 cups shredded Colby-Monterey Jack cheese, divided
