Time 4h20m

Yield 8 servings

Number Of Ingredients 15

8 short ribs (12 ounces each), trimmed and tied by a butcher
8 shallots
11 cloves garlic
1/4 cup tomato paste
6 ounces pancetta, diced
1/2 cup plus 2 tablespoons cognac or brandy
1/3 cup all-purpose flour
2 cups red wine
1/4 ounce dried porcini mushrooms
4 sprigs fresh thyme
2 bay leaves
Kosher salt and freshly ground pepper
1/4 cup chopped fresh parsley
10 ounces oyster mushrooms, trimmed
10 ounces cremini mushrooms, trimmed and halved

Steps:

  • Preheat the oven to 300 degrees F. Bring the short ribs to room temperature. Meanwhile, pulse the shallots, 10 cloves garlic and the tomato paste in a food processor to make a paste. Cook the pancetta in a large ovenproof pot over medium-high heat until crisp, about 7 minutes. Transfer the pancetta and all but 2 tablespoons drippings to a bowl.
  • Add the shallot mixture to the pot and cook, stirring, until brown, about 6 minutes. Reduce the heat to medium and add 1/2 cup cognac, scraping up the browned bits. Sprinkle in the flour and cook, stirring, about 5 more minutes. Gradually stir in the wine until smooth. Add the porcini, thyme, bay leaves and 11/2 teaspoons salt.
  • Season the short ribs with salt and pepper, place in the pot and add water to cover. Trim a piece of parchment paper so that it rests on the surface of the meat. Cover the pot with the lid and transfer to the oven. Cook until the meat is fork-tender, about 3 hours.
  • Remove the meat from the sauce and transfer to a plate. Set the sauce aside, about 10 minutes, then skim off the fat. (If the sauce is thick, add a splash of water.) Discard the bay leaves, season the sauce with salt and pepper and add the remaining 2 tablespoons cognac. Return the short ribs to the sauce and keep warm over low heat.
  • Chop the remaining 1 clove garlic, then mash with 1/2 teaspoon salt using the flat side of a knife; add the parsley and chop. Heat the pancetta and the reserved drippings in a skillet over medium-high heat. Add the oyster and cremini mushrooms and cook until brown, about 10 minutes. Toss in the parsley mixture. Untie the short ribs, divide among plates and top with the sauce and mushrooms.

SHORT RIBS BRAISED WITH MUSHROOMS AND TOMATOES

Short Ribs Braised with Mushrooms and Tomatoes image

The short ribs are slowly braised with easy-to-find dried porcini mushrooms (for real, ask someone at the fancy grocery store and they'll find them for you!) until they turn into a triumph of fork-tender goodness. I love these short ribs over mashed potatoes, but the rich tomato and mushroom gravy is fantastic over soft polenta as well. I really hope you give this cool weather wonder a try.

BEEF ESSENTIALS: BRAISED SHORT RIBS W/ MUSHROOMS

Beef Essentials: Braised Short Ribs w/ Mushrooms image

I thought I would attempt something different with these short ribs, and instead of doing the usual red wine braise, I thought of something different... A creamy mushroom sauce. When this is finished cooking, the rib meat will be fork tender, and the sauce divine. To be honest with you, the next time I do these, I think I will double the sauce. So yummy. So, you ready... Let's get into the kitchen.

PLAN/PURCHASE
2 pound(s) beef short ribs, bone in
1 tablespoon(s) sweet butter, unsalted
1 tablespoon(s) grapeseed oil
4 ounce(s) cream cheese, room temperature
2 cup(s) chicken stock, not broth
8 ounce(s) baby bella mushrooms, cleaned, stemmed, and thickly sliced (reserve stems)
1 teaspoon(s) garlic powder
1 teaspoon(s) white pepper, freshly ground
ADDITIONAL ITEMS
- garlic mashed potatoes, for serving
- dried oregano, for garnish

Steps:

  • PREP/PREPARE
  • Gather your Ingredients (mise en place).
  • Add the chicken stock to a pan, over medium heat.
  • Chopped the reserved mushroom stems, and add them to the stock.
  • Simmer, until the stock is reduced by half, about 20 - 25 minutes.
  • Strain out the mushroom stems, and reserve the stock.
  • Place a rack in the bottom position, and preheat the oven to 300f (150c).
  • Chef's Tip: I tried this dish at a couple of different temperatures, and 300f (150c) was the magic number. Too low and the ribs fail to get tender; conversely, too high and you will burn the sauce. Trust me, you do not want to burn this sauce.
  • Add the grapeseed oil, and sweet butter to a large, heavy-bottomed pot over medium-high heat.
  • When the foaming subsides, add the short ribs.
  • Brown on all sides, about 2 minutes per side.
  • Remove the short ribs from the pot, and reserve.
  • Chef's Tip: Depending on the fat content of the short ribs, you may have more oil in the pot than needed. My suggestion would be to remove all the oil, and add back 3 tablespoons to the pot.
  • Reduce the heat to medium-low, and add the sliced mushrooms.
  • Sauté until the mushrooms are softened, and release their moisture, about 8 - 10 minutes.
  • Chef's Note: While the mushrooms are cooking, use a wooden spoon to scrape up those yummy fonds that have accumulated on the bottom of the pan.
  • Add the reserved chicken stock to the pot, and use a wooden spoon to dissolve any additional fonds that might remain on the bottom of the pot.
  • Add the cream cheese, garlic, and pepper, to the pot.
  • Stir to combine.
  • Return the short ribs to the pot.
  • Cover and place into the preheated oven for 2.5 hours.
  • Remove the ribs from the pot, and allow it to stand for 5 minutes, then use a ladle or spoon, to remove all the fat that has risen to the top.
  • PLATE/PRESENT
  • Remove the meat from the bones (or leave the bones in for a rustic appearance), place on top of a big pile of mash taters, ladle some of the sauce on top, and garnish with a sprinkle of dried oregano. Enjoy.
  • Keep the faith, and keep cooking.

Tips:

  • Selecting Beef Short Ribs: Choose short ribs that are well-marbled with fat, as this will add flavor and richness to the dish. Look for short ribs that are about 2-3 inches thick.
  • Braising Liquid: The braising liquid is essential for tenderizing the short ribs and infusing them with flavor. Use a combination of beef broth, red wine, and herbs and spices. You can also add vegetables such as onions, carrots, and celery to the braising liquid for extra flavor.
  • Marinate the Short Ribs: Marinating the short ribs in the braising liquid for several hours or overnight will help to further tenderize them and enhance the flavor.
  • Slow and Low Cooking: Braising is a low and slow cooking method that allows the short ribs to cook gently and evenly. Cook the short ribs for at least 2-3 hours, or until they are fall-off-the-bone tender.
  • Serve with Creamy Mashed Potatoes: Creamy mashed potatoes are the perfect accompaniment to beef short ribs. They provide a rich and creamy contrast to the savory and flavorful short ribs.

Conclusion:

Beef short ribs are a delicious and comforting dish that is perfect for a special occasion or a weeknight meal. By following these tips, you can create fall-off-the-bone tender short ribs that are bursting with flavor. Serve them with creamy mashed potatoes and your favorite vegetables for a complete and satisfying meal.
