MOM'S BEEF SHISH KABOBS
My Mom has cooked this recipe for as long as I remember. Now that I live on my own, I can't wait to go back home over the holidays to have this excellent dish. Mom would probably be upset that I gave it away, but it is so delicious that I think everyone should have a chance to experience it. Technically shish kabobs use lamb, so these should be called beef kabobs, but this is the family recipe and what we call it.

ESPETADAS (PORTUGUESE BEEF SHISH KABOBS)
This is a Portuguese classic dish that originates from the island of Madeira. It involves simple ingredients but delivers amazing flavors. This is a regular staple in the summer, and the first meal I have when I travel to my home country, Madeira. You can add whole garlic cloves, sliced white onions, and red peppers in between the beef on the skewers. Also, for extra delight, you can do it how they do it in the restaurants. They hang the beef on long metal skewers with a chunk of butter on top that melts down the skewer.

Tips:
- Choose the right cut of beef: Use a tender cut of beef, such as sirloin, tenderloin, or flank steak. These cuts will cook quickly and stay juicy.
- Marinate the beef: Marinating the beef helps to tenderize it and add flavor. Use a marinade that contains acidic ingredients, such as lemon juice or vinegar, to break down the proteins in the beef.
- Use fresh vegetables: Fresh vegetables will add color and flavor to your shish kabobs. Choose vegetables that are in season and that will hold up well on the grill, such as bell peppers, onions, tomatoes, and zucchini.
- Skewer the beef and vegetables: Use metal or wooden skewers to skewer the beef and vegetables. Make sure to leave some space between the pieces so that they cook evenly.
- Grill the shish kabobs: Grill the shish kabobs over medium heat for 10-12 minutes, or until the beef is cooked to your desired doneness. Turn the skewers occasionally to ensure that the beef and vegetables cook evenly.
Conclusion:
Beef shish kabobs are a delicious and easy-to-make dish that is perfect for summer grilling. By following these tips, you can make sure that your shish kabobs are juicy, flavorful, and cooked to perfection.
