1 (3 1/2) pound boneless beef chuck roast
1 pinch salt and ground black pepper to taste
2 tablespoons olive oil
2 cloves garlic, minced
1 (14 ounce) can beef broth
1 (14.5 ounce) can whole berry cranberry sauce
1 tablespoon balsamic vinegar
1 tablespoon Worcestershire sauce
1 large onion, cut into chunks
4 sprigs fresh thyme, or more to taste
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function; pour olive oil into the pot. Sprinkle roast with salt and pepper and sear in the hot oil until well browned, 3 to 4 minutes per side. Transfer roast to a plate.
  • Stir garlic into the pot and cook for 30 seconds. Pour in beef broth and scrape up all bits that have stuck to the pan. Stir in cranberry sauce, balsamic vinegar, and Worcestershire sauce. Place roast into the sauce and spoon some sauce over the top. Place onion and thyme around and on top of the roast.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 60 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, at least 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Transfer roast to a serving plate. Remove onions and thyme sprigs from the pot. Select Saute function. Mix cornstarch and water together in a bowl and stir into the pot; let simmer until gravy starts to thicken, about 10 minutes. Serve gravy with roast.

2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
1 beef chuck roast (4 to 5 pounds)
2 tablespoons canola oil
1 medium onion
6 whole cloves
1 cup water
1 medium carrot, shredded
2 cinnamon sticks (3 inches)
1 can (14 ounces) whole-berry cranberry sauce
2 tablespoons cider vinegar

Steps:

  • Combine flour, salt and pepper; rub over roast. In a Dutch oven, brown roast in oil. Cut onion in half and stick the cloves into it. Add onion, water, carrot and cinnamon to pan. Bring to a boil. Reduce heat; cover and simmer for 2 hours, adding water if needed., Skim fat. Combine cranberry sauce and vinegar; pour over the roast. Cover and simmer 30-45 minutes longer or until meat is tender. Discard onion, cloves and cinnamon.

4 1/2 lbs boneless beef rump roast
2 tablespoons cooking fat
2 teaspoons salt
1/8 teaspoon pepper
1/4 cup water
24 pitted prunes
1 medium onion, sliced and separated into rings
1 (16 ounce) can jellied cranberry sauce
2 tablespoons lemon juice
1/4 teaspoon allspice

Steps:

  • Lightly brown pot roast in cooking fat.
  • Pour off drippings.
  • Season meat with 1 salt and 1/8 t pepper.
  • Place on rack in Dutch oven or roasting pan.
  • Add water.
  • Cover tightly and cook in slow oven (325) for 3 to 3 and 1/2 hours our until meat is tender.
  • The last 15 minutes of cooking time, add prunes and onion rings.
  • Cover again and continue cooking.
  • Remove meat, prunes and onions from pan.
  • Pour off all but 1/4 c drippings.
  • Mash cranberry sauce into drippings and stir to blend.
  • Add onions, lemon juice, allspice and 1 t salt.
  • Bring to a boil and cook over low heat until the cranberry sauce is dissolved.
  • Add prunes to sauce and cook 5 minutes.
  • Serve carved roast garnished with prunes on hot platter.
  • Accompany with cranberry gravy.

1kg braising steak
3 onions
300ml red wine
300ml stock
3 rounded tbsp cranberry sauce

Steps:

  • Cut the meat into large chunks. Tip 2 tbsp flour with some salt and pepper into a large food bag, add the beef and shake to coat the pieces. Thinly slice the onions.
  • Heat 2 tbsp olive oil in a large heavy-based pan. Add the beef and fry on all sides until evenly browned. You may need to do this in two batches. Remove to a plate.
  • Heat 1tbsp oil in the pan if you need it, then add the onions and fry quickly for 5 minutes until tinged brown. Return the beef to the pan and add the wine and stock. Bring to the boil, stirring to scrape up the juices. Sprinkle with salt and pepper.
  • Reduce the heat, cover tightly with a lid and cook at a gentle simmer for 11⁄2 hours until the beef is tender. Stir in the cranberry sauce, taste and add more seasoning if necessary. Simmer for a further 5 minutes and serve with mash, and a scattering of flatleaf parsely.

1 (3 pound) beef chuck roast
1 (16 ounce) can jellied cranberry sauce
2 tablespoons butter
