Time 2h10m

Yield 12

Number Of Ingredients 8

1 (3 pound) boneless beef eye of round roast
½ teaspoon ground black pepper
2 tablespoons vegetable oil
1 small onion, finely chopped
3 cloves garlic, minced
1 tablespoon finely chopped fresh parsley
1 (26 ounce) carton Swanson® Beef Stock or Swanson® Unsalted Beef Stock
¼ cup all-purpose flour

Steps:

  • Heat the oven to 325 degrees F. Place the beef, fat-side up, onto a rack in a shallow roasting pan. Season the beef with half the black pepper.
  • Roast for 1 1/2 hours for medium-rare or until desired doneness. Remove the beef from the pan. Let the beef stand for 15 minutes before slicing.
  • Add the oil to the roasting pan and heat over medium heat. Add the onion, garlic, parsley and remaining black pepper to the pan. Cook and stir until the onion is tender-crisp, scraping up the browned bits from the bottom of the pan.
  • Stir the stock and flour in a large bowl until smooth. Add the stock mixture to the pan. Cook and stir until the mixture boils and thickens. Serve the gravy with the beef.

Tips:

  • Choose the right cut of beef. A chuck roast or rump roast is a good choice for this recipe.
  • Brown the beef roast in a large pot or Dutch oven over medium-high heat. This will help to develop flavor and color.
  • Add the onions, garlic, and herbs to the pot and cook until the onions are softened.
  • Pour in the beef broth and red wine. Bring to a boil, then reduce heat to low and simmer for 2-3 hours, or until the beef is tender.
  • Make the onion gravy by straining the cooking liquid from the pot and reserving the beef and onions. In a separate saucepan, melt the butter over medium heat. Add the flour and whisk to combine. Gradually whisk in the reserved cooking liquid until the gravy has thickened.
  • Serve the beef roast and onion gravy over mashed potatoes, egg noodles, or rice.

Conclusion:

This beef roast and onion gravy recipe is a classic comfort food dish that is perfect for a cold winter day. The beef is braised in a flavorful broth until it is fall-apart tender, and the onion gravy is rich and delicious. Serve this dish with your favorite sides for a hearty and satisfying meal.
