At our house we call this recipe "cube steaks" but it's actually ground round patties smothered in a delicious gravy. Very simple and perfect for those on a strict budget as we are. :) Serve with lots of hot mashed potatoes, and the gravy spooned over everything. :) This recipe can easily be doubled for a larger group. Make sure you're sitting when you taste this one- it's been known to make the knees buckle-it's THAT good! And don't be alarmed if you find yourself in a wrestling match over the last of the gravy, that's perfecly normal. Enjoy!!

1 -1 1/2 lb ground round
1 cup flour
1 (10 3/4 ounce) can cream of mushroom soup
2 beef bouillon cubes
3/4 cup milk
1/2 cup water
salt and pepper

Steps:

  • Salt a large,deep skillet and heat to medium.
  • Divide ground beef into about 8 thin patties and dredge in the flour, coating well. (patties will fatten up when you cook them.).
  • Brown patties on both sides and set aside, leaving in any drippings and stuck flour to the bottom of the pan.
  • Turn off heat and add soup, bullion cubes, milk and water to the pan. (bullion cubes will dissolve during cooking.).
  • Bring gravy to a simmer, mixing well.
  • When gravy starts to simmer add beef patties back in and cover.
  • Simmer covered for about 20 min, stirring occasionally, until gravy is thickened. Season with salt and pepper as desired. Yummy!

1 egg
1/2 cup dry breadcrumbs
1/2 envelope dry onion soup mix
1 teaspoon Worcestershire sauce
1/8 teaspoon pepper
1/2 envelope dry onion soup mix
2 cups water
2 tablespoons flour

Steps:

  • Combine all patty ingredients;mix thouroughly with your hands and shape into 4 patties.
  • Spray a non-stick skillet, and brown patties on both sides.
  • Add dry onion soup mix and 1 1/2 cup water.
  • Cover pan tightly and simmer for 20 minutes.
  • Remove patties to a plate.
  • In a gravy shaker or jar, combine 1/2 cup water with 2 tbs. flour.
  • Stir flour and water into onion gravy.
  • Stir constantly with a whisk until it comes to a boil.
  • Boil 1 minute.
  • Return patties to pan.
  • Serve with mashed potatoes or hot cooked noodles.

1/2 teaspoon ground mustard
1/2 teaspoon smoked paprika
1 large egg
1 clove garlic, minced
Kosher salt and freshly ground black pepper
1 pound ground beef (80/20)
2 tablespoons breadcrumbs
1 tablespoon vegetable oil
10 ounces baby bella mushrooms, sliced
2 sprigs thyme, leaves picked and stems discarded
3 tablespoons unsalted butter
1 small onion, thinly sliced
1 clove garlic, sliced
3 tablespoons all-purpose flour
2 cups low-sodium beef broth, hot
2 teaspoons Worcestershire sauce
2 tablespoons fresh parsley, roughly chopped

Steps:

  • For the hamburger steaks: Whisk together the mustard, smoked paprika, egg, garlic, 1 teaspoon salt and 1/4 teaspoon pepper in a medium mixing bowl. Mix in the ground beef and breadcrumbs by hand, then form into 4 oval patties, about 1/2 inch thick.
  • Set a large nonstick pan over medium-high heat and add the oil. Add the patties and brown on both sides, about 3 minutes per side. Transfer the patties to a plate; set aside.
  • For the onion and mushroom gravy: Turn the heat down to medium and add the mushrooms and thyme. Cook until the mushrooms release their liquid and are browned, about 8 minutes. (The mushrooms might seem dry at first, but will eventually release liquid and add moisture to the pan.) Transfer the mushrooms to a plate; set aside.
  • Melt the butter in the pan, add the onions and garlic and cook until translucent and lightly golden, about 10 minutes. Sprinkle in the flour and cook, stirring, until the butter and liquid are absorbed, about 1 minute. Pour the broth and Worcestershire into the pan and stir until the flour is dissolved.
  • Turn the heat to high and bring to a boil. Stir the mushrooms back into the pan and nestle in the beef patties. Cover with a lid and reduce the heat to medium low. Let simmer until the sauce has thickened and a thermometer inserted into the patties registers 165 degrees F, about 10 minutes.

I found this recipe in a magazine many years ago, and have made it numerous times. Please don't substitute any other soup as it will just not be the same, this one is special! Also, don't add salt - it is not needed. The original recipe called for topping the patties with canned French Fried onions, if desired. I do not usually do this, but you might like them that way.

1 1/2 lbs ground beef
1 egg, lightly beaten
1/2 cup soft breadcrumbs
1 (10 3/4 ounce) can campbell beefy mushroom soup

Steps:

  • Add the egg and bread crumbs to the ground beef and mix well.
  • Shape into 4 to 6 patties.
  • Brown both sides in ungreased skillet, over medium heat, not cooking them completely here.
  • Drain off the fat.
  • Spoon over the patties the undiluted Beefy-Mushroom soup.

1 large egg
2 lbs ground beef
2/3 cup ketchup
1 tablespoon dried Italian seasoning
1 medium onion, chopped

  • Crush the saltines and place them in a large bowl.
  • Add the egg and ground beef and mix well with your hands.
