3 tablespoons extra-virgin olive oil
1/4 cup grated carrot
1/4 cup grated onion
1/2 pound mild Italian sausage, ground
1 pound ground beef, 80/20
2 tablespoons tomato paste
3 garlic cloves, sliced
1/4 cup red wine
Salt and pepper
1 large (28 ounce) can crushed tomatoes
1/2 pound fresh pasta, such as pappardelle
3 tablespoons minced fresh basil
1/4 cup minced parsley, with some reserved for garnish
Grana Padano cheese, grated, for garnish

Steps:

  • Bring 4 quarts salted water to a boil in large pot.
  • In a large pot on high heat, add extra-virgin olive oil. Add carrot and onion and cook for 1 minute. Add both sausage and ground beef and cook until 3/4 done, about 5 minutes.
  • Add tomato paste and garlic and cook for 2 minutes. Deglaze with wine and reduce for 2 minutes. Season with salt and pepper. Stir in crushed tomatoes and reduce for 10 minutes on medium heat until slightly thickened.
  • Add pasta to water and cook for 2 to 3 minutes, stirring to prevent sticking.
  • Stir in basil, parsley, and pasta and season with salt and pepper. Add pasta cooking water, if needed, to loosen sauce to liking. Garnish with grated cheese and parsley.

1 onion, chopped
5 cloves garlic, minced

1 * 1 lb. filet mignon, cut into 2 inch medallions
3 * 3 tablespoons balsamic vinegar
1 * 1 teaspoon brown sugar
1/2 * 1/2 teaspoon salt
1/4 * 1/4 teaspoon coarsely ground black pepper
2 * 2 teaspoons olive oil
2 * 2 teaspoons butter
3/4 * 3/4 cup half-and-half
1/4 * 1/4 cup chicken broth
1/4 * 1/4 cup dry white wine
1/4 * 1/4 cup crumbled Gorgonzola cheese, plus extra for garnish
1 * 1 tablespoon freshly grated Parmesan cheese
1/4 * 1/4 teaspoon salt
1/8 * 1/8 teaspoon black pepper
8 * 8 ounces uncooked pasta, linquine or fettuccini

Steps:

  • Toss the filet mignon medallions with the balsamic vinegar, brown sugar, salt, and pepper. Let rest in the refrigerator for 20 minutes. Meanwhile, prepare a pot of water to boil and cook pasta according to package directions. Drain and set aside. In a saute pan, heat the oil over medium heat. Add the beef. Cook without turning for 2-3 minutes, or until browned. Turn and repeat. Remove from heat and cover to keep warm. (If you would like the meat more well done, cook for additional time) Combine the butter through white wine in a saucepan. Bring to a slow simmer and stir in the Parmesan and Gorgonzola. Season to taste with salt and pepper. Let simmer for 2 minutes, stirring to ensure the cheese has dispersed evenly. Toss the pasta with the sauce and filet mignon medallions. Garnish with additional Gorgonzola. Note: just before serving, I threw the asparagus into the pan I cooked the beef in. Sauteed it for a minute, poured a few glugs of white wine, and put the lid on it. After steaming it for a minute or two I seasoned with salt and pepper to taste. Serve it drizzled with some of the pan drippings you cooked it in.

2 tablespoons olive oil
¾ pound ground beef
1 (16 ounce) can pineapple chunks, drained and juice reserved
1 leek, trimmed and thinly sliced
3 tablespoons mild curry powder
1 tablespoon chicken bouillon granules
1 pinch salt and freshly ground black pepper to taste
6 tablespoons ketchup, or more to taste
3 tablespoons tomato paste, or more to taste
¾ cup heavy whipping cream

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Heat olive oil in a large skillet over medium-high heat and cook ground beef until browned and crumbly, 5 to 10 minutes. Add pineapple and leek and cook over high heat for 5 minutes. Pour in a few tablespoons of the pineapple juice. Season with curry, chicken granules, salt, and pepper.
  • Stir in ketchup and tomato paste and mix well. Cover skillet and simmer sauce over low heat for 5 to 8 minutes. Add more pineapple juice if sauce appears dry. Pour in cream and mix with drained penne.

EGGPLANT AND BEEF PASTA SAUCE



Eggplant and Beef Pasta Sauce image

I devised this combination originally to be put on top of Rice, but it actually is a lot better on pasta, especially potato Gnocchi.

450 g eggplants
500 g beef mince
6 garlic cloves
6 small red chilies
2 canned tomatoes
1 onion
100 ml red wine
mushroom
Tabasco sauce
salt
pepper
dry oregano
butter
olive oil

Steps:

  • Cut Eggplant into pieces and soak in salted water for about 20 minutes. Take out and dry.
  • Slowly melt butter and olive oil together in a large pan, make sure not Add the finely chopped chili and garlic and simmer on a low heat for a few minutes.
  • Add the chopped onion - cook on low for a few minutes.
  • Add the mushrooms, make sure there is enough oil.
  • Add the eggplant and leave to cook until the eggplant is soft.
  • In the meantime cook the beef mince in a separate pan, if you want a stronger garlic flavour, add some crushed garlic to this as well.
  • Add one tin of tomatoes to the Beef Mince, and one to the Eggplant, let it cook for a few minutes, then put a splash of red wine in the Eggplant. (This doesn't really matter how you want to do it, because the next step is putting the mince in the eggplant pan anyway!).
  • Add the beef mince to the other pan.
  • Let the sauce simmer for about 10 minutes, or until the sauce has thickened.
  • Add some dry oregano to the sauce, salt, pepper and some Tabasco sauce. Only add as much Tabasco sauce as you think you can handle, but you should put in some because it does make a difference to the sauce.
  • If the sauce is looking a bit watery, add some more butter at different stages in the cooking process.
  • Serve over pasta (Try it over Gnocchi!) and put some grated Parmesan cheese on top. Season to your taste.

I found this recipe on my butcher's website and decided to give it a try. I used shoulder steaks and let me tell you, it was fabulous! The steak is so tender, and the sauce (or gravy as it's called in South Philly) is delicious.

1 1/2 lb boneless beef chuck or shoulder steaks
1/2 c parmesan reggiano, divided in half
4 c assorted sliced mushrooms, such as crimimi, shiitaki or oyster (i didn't have these on hand so i used button mushrooms)
1 medium onion, chopped
3 clove garlic, chopped
1 c dry red wine (you may use beef broth in its place)
1 jar(s) (26 ozs) fire-roasted tomato and garlic sauce or other pasta sauce
1 pkg (12 ozs) fresh fettuccine, cooked

Steps:

  • 1. 1. Sprinkle beef steaks with salt and pepper; press 1/4 cup Parmesan cheese onto steaks. Spray large nonstick skillet with cooking spray. Heat over medium-high heat until hot; brown steaks. Remove.
  • 2. 2. Spray skillet with cooking spray again; heat over medium heat until hot. Add mushrooms, onion and garlic; cook and stir 4 to 5 minutes or until tender.
  • 3. 3. Add wine; cook and stir 3 minutes. Stir in marinara sauce. Add steaks; bring to a boil. Reduce heat; cover tightly and simmer 1-1/4 to 1-1/2 hours or until beef is fork-tender.
  • 4. 4. Carve steaks. Serve beef and 2 cups sauce over pasta. Sprinkle with 1/4 cup cheese. Pass remaining sauce.
