1/2 cup uncooked orzo pasta (3 oz)
2 teaspoons vegetable oil
1 lb zucchini squash, cut in half lengthwise, cut in 1/8-inch slices
1/2 teaspoon dried Italian seasoning
1/2 teaspoon salt
1 lb ground beef (at least 90% lean)
1/2 cup chopped onion
2 teaspoons finely chopped garlic
1 can (14.5 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
1 cup shredded part-skim mozzarella cheese (4 oz)
1/2 cup part-skim ricotta cheese
1/4 cup shredded Parmesan cheese (1 oz)
1 tablespoon finely chopped fresh basil leaves
1/2 teaspoon finely chopped fresh thyme leaves
1/4 teaspoon crushed red pepper flakes

Steps:

  • Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package.
  • In 12-inch nonstick skillet, heat 1 teaspoon of the oil over medium heat. Cook squash, Italian seasoning and 1/4 teaspoon of the salt in oil 4 to 7 minutes, stirring occasionally, until squash has started to soften but is still crisp-tender. Transfer to large bowl; stir together with orzo.
  • In same skillet, heat remaining 1 teaspoon oil over medium-high heat. Cook beef, onion, garlic and remaining 1/4 teaspoon salt in oil 7 to 8 minutes, stirring frequently, until thoroughly cooked; drain, and add to bowl with squash. Add crushed tomatoes, 3/4 cup of the mozzarella cheese, the ricotta cheese, Parmesan cheese, basil, thyme and pepper flakes; stir to combine. Spoon mixture into baking dish.
  • Bake 35 to 40 minutes or until bubbling on edges and completely heated through. Top with remaining 1/4 cup mozzarella cheese; let stand 5 minutes.

3 medium eggplants, (sliced into 1/4-inch slices)
salt
1/4 cup olive oil
1/2 cup chopped onion
16 ounces ground beef
1 medium garlic clove, (minced)
1/2 teaspoon oregano
1 teaspoon basil
1/2 teaspoon ground cinnamon
1 teaspoon salt
freshly ground black pepper
One 8-ounce can tomato sauce
1/2 cup toasted pine nuts
10 slices (8 ounces) mozzarella cheese
1/4 cup shredded Parmesan cheese

Steps:

  • Place sliced eggplants into a colander. Sprinkle with salt and set aside for at least 30 minutes to allow salt to draw out excess liquid from eggplant. Pat slices dry on paper towels. Place on greased or nonstick baking sheet and brush with oil using pastry brush. Broil for approximately 4 minutes, or until slices are just browned. Turn slices over and repeat process for the other side. Layer slices in 9x13-inch dish and set aside.
  • Preheat the oven broiler.
  • In a sauté pan over medium-high heat, combine the onion and ground beef and sauté until meat is browned. Stir in the garlic, oregano, basil, cinnamon, salt and pepper. Add the tomato sauce. Remove from heat and stir in pine nuts. Cool.
  • Preheat the oven to 350 degrees F.
  • Place large tablespoonfuls of the beef mixture on top of the eggplant slices in the baking dish. Places slices of mozzarella cheese over the top to completely cover the beef layer. Sprinkle with Parmesan and bake at 350 degrees for 30 minutes.
  • Sprinkle with additional Parmesan and serve while hot.

1 medium eggplant, peeled and sliced into 1/4-inch rounds
1 pinch salt, or more as needed
1 cup cornmeal
½ cup all-purpose flour
1 teaspoon paprika
1 teaspoon cinnamon
1 teaspoon ground ginger
¼ cup vegetable oil
1 pound ground beef
2 cloves garlic, minced
1 medium sweet onion, sliced
2 teaspoons Italian seasoning
salt and ground black pepper to taste
1 (15 ounce) can diced tomatoes
1 cup shredded Cheddar cheese
½ cup shredded Monterey Jack cheese
1 cup shredded Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray an 8-inch square glass pan with cooking spray.
  • Place eggplant slices on paper towels and sprinkle with salt. Top slices with additional paper towels; allow salt to draw off some of the moisture, 30 to 45 minutes. Press down on paper towels to get as much moisture out as you can.
  • Combine cornmeal, flour, paprika, cinnamon, and ginger in a bowl. Dredge eggplant slices in mixture.
  • Heat vegetable oil in a frying pan over medium heat. Place floured eggplant slices in pan and cook until edges start to brown, 3 to 5 minutes. Flip; cook until crisp on edges but still soft in centers, 3 to 4 minutes more. Remove from heat and set aside.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add garlic, onion, Italian seasoning, salt, and pepper. Cook and stir until onions are softened and translucent, 3 to 4 minutes. Remove from heat and set aside.
  • Layer eggplant slices to cover bottom of the prepared pan; follow with ground beef, 1/2 can diced tomatoes, 1/2 the Cheddar cheese and 1/2 the Monterey Jack cheese. 2 large egg plants, halved and boiled until tender
1 large green bell pepper, chopped
1 large onion diced
3 stalk(s) celery, diced
21/2-3 lb lean ground beef
3 can(s) tomato soup, undiluted
1 can(s) diced tomatoes
1 1/2 c orzo pasta, cooked al dente
5-6 slice stale bread,(about 2 cups) made into bread crumbs w/food processor or blender
2 tsp smoked paprika, italian seasoning & granulated garlic
1 1/2 tsp black pepper
2-3 Tbsp extra virgin olive oil
1 1/2 c sharp cheddar cheese shreds,divided
1 1/2 c shredded parmesan cheese, divided

Steps:

  • 1. These are most of the main ingredients.
  • 2. Preheat oven to 375 degrees F. Cut egg plants in half and boil until tender. Then remove pulp and chop or process in food processor & add to a large bowl
  • 3. Cook Orzo until al dente according to directions on package. Drain then add to bowl with cooked eggplant. Stir to mix together.
  • 4. Cook ground beef, and drain any excess liquid from skillet,
  • 5. Process bread crumbs and add to bowl and stir to blend ingredients together.
  • 6. Process the celery, onions and bell peppers in processor, then add the olive oil to a large skillet, heat and saute until vegetables are crisp tender. Then set aside to cool a bit before adding to bowl of other ingredients.
  • 7. Add in diced tomatoes, & cooled sauteed veggies and spices then stir and blend together.
  • 8. Add in one cup each the cheddar and parmesan cheese shreds. Then stir to blend together
  • 9. Add in the cooked Ground Beef, and stir till completely mixed.
  • 10. Spray a 9X15 size casserole dish with non stick cooking spray, then add in the eggplant mixture, & top with the remaining 1/2 cup of both cheeses. Place in preheated 375 degree F. oven and bake for 25 minutes or until casserole is hot and bubbly. Remove from oven serve with your favorite salad and a nice crusty bread.

1 (8 ounce) package orzo pasta, cooked
olive oil flavored cooking spray
1 medium fresh eggplant, unpeeled, sliced 1/2-inch thick
4 medium fresh tomatoes, sliced 1/2-inch thick
4 tablespoons flour
olive oil or vegetable oil
1 large onion, sliced thin
1 -2 garlic clove, minced
2 tablespoons butter
2 tablespoons flour
1 cup beef bouillon
2 tablespoons cream
1/2 teaspoon dried oregano
1/2 teaspoon cinnamon
1/2 cup parmesan cheese
1/3 cup chopped kalamata olive

Steps:

  • Spread orzo in bottom of 13-inch x 9-inch pan coated with olive oil flavored cooking spray.
  • Lightly coat both sides eggplant slices with cooking spray and sauté in batches over medium heat in a large skillet until lightly browned on both sides (if slices get too dry, mist pan and slices with more spray); set aside.
  • Meanwhile, dust tomato slices with flour and, in a separate pan, fry in batches in 1/4 inch oil until lightly browned on both sides; set aside.
  • Re-spray skillet you cooked eggplant in and sauté onion slices with garlic until soft and golden.
  • Spread half the tomatoes in a layer over the orzo, then half the onion-garlic mixture, then half the eggplant slices; repeat layers.
  • Make sauce: Melt butter and blend in flour until smooth. Add bouillon slowly, stirring constantly, until thickened. Add cream, oregano and cinnamon. Simmer very gently for about 1 minute.
  • Pour sauce over casserole.
  • Sprinkle casserole with the parmesan cheese and scatter chopped olives over the top.
  • Bake at 400°F about 15 minutes until top is crispy brown.

2 -4 garlic cloves, minced

1/4 teaspoon pepper
8 ounces dried orzo pasta (1 cup)
1 (10 ounce) package frozen chopped spinach, thawed
1/2-3/4 cup grated parmesan cheese

Steps:

  • Sprinkle salt into a 10 to 12 inch frying pan over medium-high heat. Crumble beef into pan and cook, stirring often, until meat begins to brown, 3 to 5 minutes. Reduce heat to medium, stir in onion, and continue to cook, stirring, until onion is soft but not brown, about 5 minutes. Spoon off and discard excess fat.

1 medium eggplant, peeled and cubed
1-1/2 pounds ground beef
1 medium onion, chopped
