2 lb beef sirloin, cut into 1 inch/25 mm cubes
1 tablespoon garlic, minced
½ teaspoon coriander powder
1 teaspoon cumin
½ teaspoon paprika
1 teaspoon distilled white vinegar
½ cup olive oil
3 bell peppers, red, yellow and green, cut into 1 inch (2 cm) pieces
1 red onion, cut into 1 inch (2 cm) pieces
1 cup garlic cloves, peeled
1 teaspoon salt
4 cups vegetable oil
1 lemon, juiced

Steps:

  • In a re-sealable freezer bag, add beef, garlic, coriander, cumin, paprika, white vinegar, and olive oil. Seal the bag and distribute seasonings. Allow to marinate in the refrigerator for 24 hours.
  • In a food processor, add garlic cloves and pulse until the garlic becomes finely minced.
  • Add salt and pulse until well incorporated. Scrape down the sides of the bowl if you see the garlic building up on the sides.
  • Turn on the food processor and keep it on. In a thin stream pour ½ cup (120 ml) of oil followed by ½ tsp of lemon juice. Keep alternating until you have used all of the oil and lemon juice. The garlic sauce should become light, fluffy and creamy.
  • Store garlic sauce in an airtight container in the refrigerator for up to 1 week!
  • Preheat the grill on high.
  • To assemble the kebabs, spray skewers with non-stick cooking spray and alternate threading beef, onions and bell peppers onto the skewer.
  • Cook 5-7 minutes on each side.
  • Serve kebabs with garlic sauce, salad, rice, hummus, and pita bread.

2 bell peppers
1 large red onion
1/2 cup oil
1/4 cup Worcestershire sauce
2 tablespoons low sodium soy sauce
2 tablespoons apple cider vinegar
1 tablespoon garlic powder
1 tablespoon honey
1 teaspoon onion powder
1/2 teaspoon chipotle chili powder optional (for a bit of kick)

Steps:

  • Cut steak, peppers and onion into equal sized pieces (about 1-1.5")
  • In a large freezer bag, combine the oil, Worcestershire sauce, soy sauce, vinegar, garlic, honey, onion powder and chipotle powder if using.
  • Add steak and let marinate for at least one hour, and up to 8 hours (see notes above regarding marinade times)
  • If using wooden skewers, soak for 10 minutes before skewering your beef and vegetables.
  • Preheat the grill to medium-high.

3/4 teaspoon kosher salt
1/2 cup nonfat Greek yogurt, such as Fage
1 tablespoon extra-virgin olive oil

My Mom has cooked this recipe for as long as I remember. Now that I live on my own, I can't wait to go back home over the holidays to have this excellent dish. Mom would probably be upset that I gave it away, but it is so delicious that I think everyone should have a chance to experience it. Technically shish kabobs use lamb, so these should be called beef kabobs, but this is the family recipe and what we call it.

⅓ cup vegetable oil
½ cup soy sauce
¼ cup lemon juice
1 tablespoon prepared mustard
1 tablespoon Worcestershire sauce
1 clove garlic, minced

1 ½ pounds lean beef, cut into 1-inch cubes
16 mushroom caps
8 metal skewers, or as needed
2 green bell peppers, cut into chunks

Steps:

  • Whisk the vegetable oil, soy sauce, lemon juice, mustard, Worcestershire sauce, garlic, black pepper, and salt together in a bowl; pour into a resealable plastic bag. Steps:

  • Once your meat and veggies have been prepped let the skewering fun begin! Thread a piece of green pepper onto the skewer. Follow it with a cube of beef, then one half of a preserved lemon, a couple of pieces of red onion, another piece of beef, a piece of red pepper and cap it with a mushroom. Repeat the process with the rest of the skewers. Set all of the kabobs into a roasting pan in one layer and set aside.

My sister-in-law made this for us and even my son loves it. It tends to be a bit spicy even without the tobasco sauce, but we absolutely love it. If you find that it is too oily you can omit the vegetable oil. This freezes well and makes quite a bit. We use it for beef but you can use it on shrimp as well; I've never tried it on pork or chicken. We use fresh veggies that we like and serve this with rice.
