CUBE STEAK WITH MUSHROOM-SHERRY SAUCE
Cube steak is a tougher cut of meat pounded to make it tender. We like it because it cooks quickly and is inexpensive--perfect for a weeknight dinner. Look for presliced mushrooms to save even more time on prep. Serve with: Mashed potatoes and grilled broccoli rabe.

Steps:
- Sprinkle steaks with 1/2 teaspoon pepper and salt. Heat 1 tablespoon oil in a large nonstick skillet over medium heat. - Add the remaining 1 tablespoon oil to the pan. Add mushrooms, shallot and the remaining 1/4 teaspoon pepper; cook, stirring, until the mushrooms are golden brown and release their liquid, 4 to 5 minutes. Remove from the heat; stir in sour cream. Return the steaks (and any accumulated juice) to the pan and turn to coat with the sauce. Serve the steaks with the sauce.

Place the cooked mushrooms in a bowl and set aside. Melt 1/4 cup of butter in the skillet. Whisk in the flour, cook and stir until the flour no longer tastes raw, about 4 minutes. Slowly whisk in the beef stock. Bring to a boil, stirring constantly, then reduce heat to medium low. Pour in the reserved red wine marinade, Worcestershire sauce, prepared mustard, and red pepper flakes, then add the beef and onion mixture. Cover and simmer until the meat is tender, about 1 hour. Tips:
- Choose high-quality beef cubes for the best flavor and texture.
- Sear the beef cubes in a hot pan until browned on all sides. This will help develop flavor and prevent the beef from becoming tough.
- Use a good quality sherry for the sauce. A dry sherry is a good option, as it will not overpower the other flavors in the dish.
- Add some vegetables to the dish for extra flavor and nutrition. Mushrooms, onions, and carrots are all good choices.
- Simmer the beef cubes in the sherry sauce for at least 1 hour, or until the beef is tender. This will allow the flavors to meld and develop.
- Serve the beef cubes with mashed potatoes, rice, or noodles. You can also garnish the dish with fresh parsley or chives.
