1 1/2 lbs roast beef, peppered (right from your grocers deli - 1/4-inch thick slices)
1/4 cup marsala wine
3/4 cup beef broth
3 cups onions, cut in quarters and thin sliced (2 large)
1 teaspoon butter
1 teaspoon olive oil
1/2 teaspoon sugar
1/2 teaspoon salt
1 head garlic, peeled
1 cup olive oil
2/3 cup sour cream
2 1/2 tablespoons prepared horseradish (more or less according to taste)
1/2 teaspoon white wine vinegar
salt
pepper
1 tablespoon fresh chives, fine chopped

Steps:

  • Lets start with all the components and make them one at a time.
  • Horseradish Cream -- Just mix the sour cream, prepared horseradish (not creamy), vinegar, and season with a little salt and pepper to taste. Refrigerate until ready to use. The chives should be added right before serving.
  • Onions -- To a medium to large sauce pan, add the butter and olive oil and bring to medium heat. Add the onions and slowly begin to caramelize them - don't rush this. It will take a good thirty minutes, but it isn't hard. After 5 minutes add a pinch of salt and sugar and continue to stir now and then. After 15 minutes the moisture (water) from the onions will start to evaporate and the onions begin to caramelize. Once they get golden brown, remove, let cool and refrigerate until you are ready to use them. They can be reheated in the microwave in just a minute when you are ready to make the crostini.
  • Garlic Oil -- In a small sauce pan on medium heat, add the oil and garlic. Cook for just a minute on medium and then reduce to medium low and simmer for about 20 minutes until the garlic is golden brown. Remove the garlic and you have wonderful garlic oil. You can always buy a bottle which is expensive, and not nearly as good.
  • Beef -- Add the beef broth and marsala to a small bowl to a small pan and heat until warm. Add in the beef slices and cook just a minute or two until the beef is warm. You don't want to over cook it, it doesn't take long.
  • Crostini -- Slice and grill or broil just until golden brown on each side. Remove and brush each slice with some of the garlic oil.
  • Onions -- As the bread is toasting and the beef warming up - heat up your onions for just 1 minute in the microwave, they are all done you just want them warm.
  • Horseradish Cream -- Don't forget to stir in the chives right before you are ready to serve.
  • Toppings -- Top each garlic crostini with some of the warmed caramelized onions, then a slice or two of beef, then a little of the horseradish cream.

two 6-ounce jars marinated artichoke hearts, rinsed and drained
1 garlic clove
1/4 cup white-wine vinegar
1/2 cup olive oil
thirty-six 1/2-inch-thick diagonal slices of Italian bread (about 2 long loaves), toasted lightly
2 bunches of arugula, coarse stems discarded and the leaves washed well, spun dry, and cut into shreds (about 4 cups)
36 Parmesan curls formed with a vegetable peeler

Steps:

  • Preheat the oven to 500°F. Pat the fillet dry, season it with salt and pepper, and in a small roasting pan roast it in the middle of the oven for 23 minutes, or until it registers 125°F. on a meat thermometer for rare meat. Transfer the fillet to a cutting board and let it cool. The fillet may be roasted 1 day in advance and kept covered and chilled.
  • In a blender purée the artichoke hearts and the garlic with the vinegar, the oil, and salt and pepper to taste and transfer the purée to a bowl. The purée may be made 3 days in advance and kept covered and chilled.
  • Spread each slice of toast with some of the artichoke purée, top the purée with some of the arugula, and divide the fillet, sliced very thin, among the crostini. Top the crostini with the Parmesan curls.

3 tablespoons garlic-flavored olive oil
1 lb filet of beef, roasted rare
1 (8 ounce) bottle horseradish sauce
1 tablespoon Dijon mustard
1 teaspoon chopped fresh thyme leave
24 slices plum tomatoes, sliced very thin
4 radishes, sliced thin

Steps:

  • Preheat oven to 350 degrees.
  • Brush one side of each bread slice with olive oil.
  • Place bread, oiled side up, on a baking sheet and bake for 12 minutes.
  • Turn slices over and bake 8 minutes more.
  • Cool bread and store in an airtight container up to 3 days.

1 12 inch french bread baguette
2 Tbsp blue cheese crumbles
1 tsp prepared horseradish
1 tsp granulated garlic
1 tsp dry italian seasoning
8 oz sour cream
2 Tbsp mayonnaise
1/2 c extra virgin olive oil
1 pkg spring mix salad
1 large onion, thinly sliced
1/2 stick butter
1 Tbsp brown sugar
salt and pepper, to taste

Steps:

  • 1. Combine blue cheese, horseradish, sour cream, mayo, granulated garlic, salt and pepper. Chill for at least 30 minutes.

1/2 tsp coriander

8 oz filet mignon steaks
1/3 cup mayonnaise
3 tbl mascarpone cheese
2 tbl finely chopped fresh basil
1 1/4 tsp curry powder
1/2 tsp smoked paprika
1/4 cup cilantro leaves

  • 1. Preheat oven to 400 degrees. 2. Arrange bread slices on baking sheet. 3. Drizzle with olive oil & season with 1/4 tsp salt. 4. Bake 10-12 minutes. Leave oven on. 5. Spray a small baking sheet with vegetable oil cooking spray. 6. Combine 1/2 tsp salt, 1/4 tsp pepper, cumin, coriander & garlic. Rub the mixture all over the steak. 7. This was the appetizer and a very popular one at that. Don't let the long list of ingredients scare you, it's mostly herbs, spices and condiments for flavoring. Prep time does not include marinating time, that you have to figure out for yourself depending on your own personal tastes and time.

1 large baguette, sliced on the diagnol into pieces 1-2 centimeters thick
1/4 cup olive oil
1 garlic clove, finely minced
kosher salt, to taste
coarse black pepper, to taste
fresh thyme, finely minced, to taste (optional)
fresh rosemary, finely minced, to taste (optional)
fresh oregano, finely minced, to taste (optional)
fresh basil, finely minced, to taste (optional)
2 tablespoons soy sauce
1/4 tablespoon prepared wasabi
2 tablespoons honey
2 tablespoons brandy
1 garlic clove, finely minced
1/2 kg filet of beef
100 g roasted sesame seeds
oil oil, for searing the meat
1/2 cup Thai sweet chili sauce
1/2 cup soy sauce
4 tablespoons date honey
2 tablespoons sesame oil
4 tablespoons mirin (rice wine)
4 tablespoons sake
50 g toasted sesame seeds
sprouted sunflower seeds, for garnish or alfalfa sprout

Steps:

  • To prepare the fillet:.
  • Mix all the marinade ingredients, and marinade the piece of meat for a minimum of 20 minutes and up to 2 hours.
  • Remove the fillet from the marinade and dry with a paper towel.
  • Roll the fillet in the sesame seeds and pat them down hard into the meat.
  • Heat up a heavy frying pan for at least 7 minutes, until smoking, and then add the olive oil.
  • Sear the meat for 2-3 minutes on each side and then remove to a cutting board.
  • Wait 5-7 minutes for the juices to settle, and then cut into thin slices.
  • To prepare the sauce:
  • Place all the sauce ingredients with the exception of the sesame seeds and the sprouts into a saucepan. Cook on high heat until the sauce has been reduced by half and has thickened.
  • Let sit at room temperature slightly and add in the sesame seeds.
  • Keep the sprouts for the garnish at the end.
  • To make the crostini:.
  • Preheat the oven to 220 degrees centigrade.
  • In a bowl, mix the olive oil, minced garlic, minced herbs, and add the coarse salt and pepper to taste.
  • Spread the baguette slices with the herby oil and bake in the oven for several minutes until the slices are toasted.
  • To put the whole thing together:.
  • Mix the beef slices with the sauce.
  • Place one slice of beef on each toasted baguette slice and top with the sprouts.

1 baguette
18 slice thinly sliced prime rib cooked rare.
1 Tbsp hot horseradish
1/4 c creme fraiche or mascarpone.
1/4 tsp fresh ground pepper & coarse sea salt

Steps:

  • 1. Slice the baguette into one inch slices or wider if you prefer. Lightly toast each side, (toaster oven works great) and lightly butter one side and sprinkle with a bit of garlic salt.
  • 2. Thinly slice your left over rare roast and pile pieces on top of the baguette. Pop in a preheated toaster oven or regular oven and cook for just a few minutes, long enough to warm the meat. Top with a bit of fresh ground pepper and a few grains of sea salt.
