1 pound ground beef
1 tablespoon cornstarch
1 tablespoon dried minced onion
1 teaspoon chili powder
1/2 teaspoon garlic powder
1 can (15 ounces) tomato sauce
3/4 cup all-purpose flour
3/4 cup yellow cornmeal
3 tablespoons sugar
2 teaspoons baking powder
2 large eggs
1/2 cup 2% milk
3 tablespoons canola oil
1 can (8-1/4 ounces) cream-style corn
1 cup shredded cheddar cheese
Optional: Sour cream and salsa

Steps:

  • Preheat oven to 375°. In a large skillet, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in cornstarch, onion, chili powder and garlic powder. Stir in tomato sauce. Cook and stir 2 minutes or until thickened. Remove from heat., In a large bowl, whisk flour, cornmeal, sugar and baking powder. In another bowl, whisk eggs, milk and oil until blended; stir in corn. Add to flour mixture; stir just until moistened. Stir in cheese., Spread half the batter into a greased 2-qt. baking dish. Top with beef mixture. Spread remaining batter over filling., Bake, uncovered, until a toothpick inserted in cornbread portion comes out clean, 25-30 minutes. Let stand 5 minutes before serving. If desired, serve with sour cream and salsa.

1/2 medium onion, chopped
1 garlic clove, minced
1 jalapeno, seeded and chopped
1 can pinto beans, drained and rinsed
2 cups tomato sauce, homemade or store-bought
1 medium tomato, chopped
1 cup grated Cheddar cheese
1 cup self-rising cornmeal mix
1/2 cup self-rising flour
1 large egg
1 cup buttermilk

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large ovenproof skillet or Dutch oven set over medium heat, cook the ground beef, breaking up the meat with a wooden spoon, until browned through, 3 to 5 minutes. Drain the fat from the meat. Add the onion, garlic, jalapeno, pinto beans, tomato sauce, and tomato and remove the pan from the heat. Top with the cheese.

2 box jiffy cornbread mix

  • 1. Pre-heat oven to 400 degrees. Prepare cornbread as per directions on box. Set aside

20 ounces rotel diced tomatoes with mild green chilies, with juice
3 tablespoons cornstarch
1 cup flour
1 cup cornmeal
2 teaspoons baking powder

1/2 cup milk
3 tablespoons vegetable oil
14 ounces creamed corn
2 cups cheddar cheese, shredded

  • Preheat oven to 375°F/190°C.
  • Brown meat with"Hot Shot" seasoning, breaking it apart; drain.

19 ounces dark red kidney beans, drained and rinsed
1 medium onion, chopped
1 jalapeno pepper, chopped
1 cup frozen corn
1 tablespoon garlic powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 tablespoon brown sugar
2 tablespoons hot sauce
1 cup taco sauce
1 cup shredded sharp cheddar cheese
8 1/2 ounces jiffy box cornmeal mix

Steps:

  • Cook ground beef and drain.

For the homemade barbecue sauce:
1 1/2 c. ketchup
1/2 c. brown sugar
1/4 c. Worcestershire sauce
2 T. honey
2 t. salt
1 t. cumin
1 t. chili powder
1/2 t. allspice
1/2 t. crushed red pepper flakes
1/2 t. pepper
Combine all BBQ sauce ingredients in a small bowl and set aside.
For the beef and bean combination:
1/2 lb. dried beans (any kind, I usually use pinto or kidney)
1/2 - 1 lb. ground beef
1 onion, diced
salt and pepper to taste
optional: 1/2 diced green pepper, 1 diced celery stalk, 1 shredded carrot
2 c. barbecue sauce (homemade or from a bottle)
For the cornbread:
3/4 c. corn meal
1 1/4 c. flour
1/4 c. sugar
2 t. baking powder
1/2 t. salt
1 c. milk
1 egg, beaten
1/2 c. vegetable oil, melted butter, or meat drippings

Steps:

  • Soak beans overnight and cook until done. Brown ground beef with onions and any optional ingredients, and salt and pepper to taste. Drain. Combine beans and beef. Add reserved BBQ sauce and stir to coat all. Pour into a 13×9 casserole dish. For the cornbread: Combine all dry ingredients. Stir in remaining ingredients until moist. Spoon over beef and bean filling. Bake at 400 degrees for 30-35 minutes.

It goes together quickly, so it It makes a great mid-week casserole or hearty lunch dish. The Poblano pepper, black beans, and cumin give it a distinct south-of-the-border flair.

BEEF AND BEAN LAYER
1 Tbsp olive oil
1 lb ground sirloin (or ground beef)
1/2 medium red onion, chopped
2 to 3 clove garlic, minced
1 large poblano pepper, seeded and minced
8 oz button mushrooms, thinly sliced
15-oz can black beans, rinsed and drained
14oz can diced tomatoes (do not drain)
2 tsp ground cumin
1 tsp black pepper
1/2 tsp salt
1 cup monterey jack cheese, shredded
CORNBREAD LAYER
1 1/2 cups yellow cornmeal
1/4 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup milk
1 large egg, beaten
2 to 3 dash(es) hot sauce, or to suit (optional)
TO SERVE
1 large avocado, peeled and sliced

Steps:

  • 1. Preheat oven to 375°F. Lightly spray a 9x13-inch baking dish with nonstick cooking spray; set aside.
  • 2. In a large skillet, saute beef, onion, garlic and jalapeño in olive oil until onion is soft and no pink remains in the beef, about 6 to 7 minutes.
  • 3. Add mushrooms, drained black beans, tomatoes, cumin, pepper and salt, and cook about 5 minutes or until most of the liquid from the canned tomatoes is absorbed.
  • 4. Pour beef mixture into prepared baking dish. Use the back of a wooden spoon to smooth the top to make a level surface.
  • 5. Sprinkle the cheese over the top of the beef layer.
  • 6. Add cornmeal, flour, baking power, baking soda and salt to a medium mixing bowl, and stir until well blended. Add milk, beaten egg and hot sauce (if using). Stir until well blended.
  • 7. Pour the cornbread batter over the top of the cheese layer, making sure to completely cover the cheese and beef layers.
  • 8. Bake 25 to 30 minutes or until the cornbread layer is evenly browned. Turn baking dish halfway through baking for even browning. Remove from oven and serve immediately with avocado slices on the side.

Tips:

  • For a richer flavor, use ground beef with a higher fat content, such as 80/20.
  • To save time, use a pre-made cornbread mix. Just be sure to follow the package directions for baking.
  • If you don't have a casserole dish, you can use a 9x13 inch baking pan. Just be sure to adjust the cooking time accordingly.
