Time 27m

Yield 4 serving(s)

Number Of Ingredients 8

1 cup monterey jack cheese, shredded
4 ounces Mexican tomato sauce
2 teaspoons salt
6 eggs, beaten
1/2 lb roast beef or 1/2 lb skirt steak
1/2 cup onion, chopped
1/4 cup canola oil
12 corn tortillas, stale

Steps:

  • In a deep skillet, heat the oil to around 350.Cut the tortillas into wedges! Cook the onion and tortilla until the tortilla is crisp and golden brown. Remove from the Skillet and drain on a paper towel.Drain the skillet of oil and leave the tid-bits in the skillet.
  • Over medium heat, cut the beef into cubes and add the beef in the skillet, heat for a short time 3-4 minutes. Add the tortillas and eggs. Season with salt and pepper. Cook stirring constantly until eggs are firm.Stir in the tomato sauce, reduce heat to low or simmer until thickened, about 5 to 7 minutes.
  • Top with cheese, cook until cheese melts and serve.

Tips:

  • To make the ultimate chili sauce, use a combination of Ancho, Guajillo, and Pasilla peppers. Their smoky and fruity flavors pair perfectly with beef.
  • For a richer and more flavorful chili sauce, toast the peppers and spices before simmering them.
  • Use day-old corn tortillas for the best texture. Fresh tortillas will break down too easily and become mushy.
  • Don't overcrowd the pan when frying the tortillas. This will prevent them from crisping up properly.
  • Serve the chilaquiles immediately, topped with your favorite garnishes. Some popular options include shredded chicken or beef, sour cream, avocado, and cilantro.

Conclusion:

Beef chilaquiles is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's also a great way to use up leftover beef and tortillas. With its bold flavors and textures, this dish is sure to become a favorite in your home. So next time you're looking for a quick and easy meal, give beef chilaquiles a try.
