2 teaspoons sugar
1 can (14.5 oz) diced tomatoes, undrained
2 cans (10 1/2 oz each) condensed beef consommé
1 teaspoon dried basil leaves
2 cups frozen cheese-filled tortellini
1 cup frozen cut green beans

Steps:

  • In 3 1/2- to 4-quart slow cooker, add beef, onion, carrot, celery, garlic, sugar, tomatoes and beef consommé in order listed.
  • Cover; cook on Low heat setting 8 to 9 hours.
  • About 25 minutes before serving, stir in basil, frozen tortellini and green beans. Increase heat setting to High. Cover; cook about 25 minutes or until beans are tender.

5 tablespoons all-purpose flour, divided
1/2 pound beef top sirloin steak, cut into 1/2-inch cubes
3 teaspoons butter, divided
1 medium onion, chopped
1 celery rib, chopped
1 medium carrot, chopped
2 garlic cloves, minced
1 can (28 ounces) diced tomatoes, undrained
2 cans (14-1/2 ounces each) reduced-sodium beef broth
1-1/2 cups water, divided
1 teaspoon dried thyme
1/2 teaspoon white pepper
1/4 teaspoon salt
2 cups frozen beef tortellini

Steps:

  • Place 2 tablespoons flour in a large resealable plastic bag. Add beef, a few pieces at a time, and shake to coat. In a nonstick Dutch oven, brown beef in 2 teaspoons butter; remove and keep warm. , In the same pan, saute the onion, celery and carrot in remaining butter until tender. Add garlic; cook 1 minute longer. Add the tomatoes, broth, 1 cup water, thyme, pepper, salt and reserved beef. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. 7 cups beef broth
2 cans (14-1/2 ounces each) stewed tomatoes
3/4 cup ketchup
3/4 cup thinly sliced carrots
3/4 cup thinly sliced celery
3/4 cup finely chopped onion
1 tablespoon dried basil
1-1/2 teaspoons seasoned salt
1 teaspoon sugar
1/4 teaspoon pepper
4 bay leaves
1-1/2 cups frozen cheese tortellini
Grated Parmesan cheese, optional

I just sort of came up with this recipe. We liked it so well I decided to post it. Use a good rich beef stock like Wolfgang Puck or Emerill's rather than College Inn. If you don't have beef stock, use beef soup base rather than bouillon cubes.

1 lb beef round steak, cut in small dice
1 leek, diced (make sure you wash it well, they can be very gritty)
1 celery rib, diced
2 carrots, diced
1 large ripe tomatoes, diced or 1 (8 ounce) can diced tomatoes
1 turnip, diced (You can also use rutabega or some diced cabbage) (optional)
1 garlic clove (optional)
6 cups strong beef stock
1 bay leaf
1 teaspoon dried marjoram
1 lb beef tortellini or 1 lb cheese tortellini

Steps:

  • Brown beef well in a deep dutch oven or stock pot.
  • Add leek, celery, and onion and saute on low until veges are soft.
  • Add broth and all other ingredients. Simmer on low for 2-3 hours or until beef is tender.
  • Add tortellini. Simmer for 5 minutes, then turn off heat and let stand, covered, for at least 30-45 minutes. Tortellini will cook in the hot broth.
