The woman who owned and made the soups at my favorite deli was retiring. I asked her why, and she said, 'I'm an old lady, I'm tired of getting up early for work.' She gave me the recipe to one of my favorites. I made a few tweaks, it's DELICIOUS.

SMOKED BEEF SAUSAGE SOUP

Smoked Beef Sausage Soup image

I love ham hocks and 15 beans soup. I love potato soup. I also love beef stew, meatball soup and chicken soup, but sometimes I just want something different and a chance to play with my food so I went to my kitchen, tossed the fridge and pantry and came up with this soup on a cool rainy spring day when soup just seemed to fit the mood. Serve it with hot crusty garlic bread to dip into the broth. Use vegetable broth and leave out the meat for a vegetarian soup. Fast and easy after work meal.

Tips:

  • Choose high-quality ingredients: Use fresh, flavorful vegetables, a good quality beef broth, and a flavorful sausage. The better the ingredients, the better the soup will be.
  • Brown the beef and sausage: Browning the beef and sausage adds a lot of flavor to the soup. Be sure to brown them well, but don't overcook them.
  • Use a variety of vegetables: This recipe calls for carrots, celery, and onions, but you can also add other vegetables, such as potatoes, parsnips, or turnips. You can also dice or puree vegetables depending on the texture you want in the soup.
  • Season the soup well: This recipe uses a simple seasoning of salt, pepper, and garlic powder, but you can also add other spices, such as cumin, chili powder, or paprika.
  • Simmer the soup for a while: Simmering the soup for a longer period of time allows the flavors to meld together and develop. If you're short on time, you can simmer the soup for a shorter period of time, but it won't be as flavorful.
