My mom made this soup when I was young. I have always loved her soups. When I was able to start cooking by myself I fell in love and have added and taken items away, but my fiance love my soups. And he isn't even big on soups. I hope your family enjoys the soup as much as mine does.

PASTA BEEF SOUP

Convenient canned goods, tomato juice and a frozen pasta-vegetable medley make it flavorful and fast. But it's also flexible because you can use other ingredients, such as a different frozen pasta-vegetable blend. On occasion, I stir in shredded zucchini or yellow squash, too.-Brenda Jackson, Garden City, Kansas

Tips:

  • Choose the right beef: Use a lean cut of beef, such as chuck roast or stew meat, to prevent the soup from becoming too greasy.
  • Brown the beef: Browning the beef before adding it to the soup will help to develop its flavor and create a richer broth.
  • Use a variety of vegetables: The more vegetables you add to the soup, the more flavorful and nutritious it will be. Some good choices include carrots, celery, onions, potatoes, and tomatoes.
  • Add some herbs and spices: Herbs and spices can help to enhance the flavor of the soup. Some good choices include thyme, rosemary, garlic, and paprika.
  • Don't overcook the vegetables: Overcooked vegetables will become mushy and lose their flavor. Cook them just until they are tender-crisp.
  • Serve the soup with a side of crusty bread or crackers: This will help to soak up the delicious broth.

Conclusion:

This beef and pasta vegetable soup is a hearty, flavorful, and nutritious meal that is perfect for a cold winter day. It is also a great way to use up leftover beef and vegetables. So next time you are looking for a quick and easy meal, give this soup a try. You won't be disappointed!
