BEEF AND NOODLE CASSEROLE
A cousin brought this over to my family during a funeral. Let me first say that I DO NOT like casseroles!! Being hungry, I thought I'd at least, give it a try. This is fantastic! It looks rather bland, but has wonderful flavors. It can be doubled easily too.

Steps:
- Brown beef in skillet with onion, garlic, seasoned salt and pepper.
- Cook noodles.
- Drain meat and mix with cooked and drained noodles, soup, ½ soup can of milk, drained green beans (or drained corn).
- Put into a 9x9 casserole dish (if doubled use a 9x13) and bake, uncovered at 350°F for 30-45 minutes.
- Refrigerate any leftovers.
Tips:
- Choose the right noodles. The best noodles for this casserole are egg noodles, wide egg noodles, or even macaroni. Avoid using thin noodles like spaghetti or angel hair pasta, as they will cook too quickly and become mushy.
- Cook the noodles al dente. You want the noodles to be cooked through but still have a slight bite to them. This will help them hold their shape in the casserole.
- Use a flavorful ground beef. The ground beef is the star of this casserole, so make sure it is well-seasoned. You can use a store-bought ground beef seasoning mix or make your own by combining salt, pepper, garlic powder, onion powder, and paprika.
- Don't overcook the casserole. The casserole is done when the noodles are heated through and the cheese is melted and bubbly. Overcooking the casserole will make the noodles mushy and the cheese tough.
- Serve the casserole immediately. This casserole is best served hot out of the oven. You can garnish it with chopped parsley, green onions, or a dollop of sour cream.
Conclusion:
Beef and noodle casserole is a classic comfort food dish that is easy to make and always a hit with the family. With its simple ingredients and straightforward instructions, this casserole is a great option for busy weeknights or lazy weekends. So next time you're looking for a hearty and satisfying meal, give this beef and noodle casserole a try. You won't be disappointed!
