Kosher salt and freshly ground black pepper
1 large yellow onion, diced
3 cloves garlic, minced

Return the meat to the pot along with the remaining stock and the beer. Season with salt and pepper, to taste. Bring the stew to a simmer and cook uncovered for 20 minutes. Cover and braise in the oven for 2 hours.

3 Tbsp olive oil
4 lb boneless beef short ribs, cut into 1 1/2-inch pieces
salt and pepper, to taste
1 large yellow onion, diced
3 clove garlic, minced
2 large carrots, diced
2 large celery stalks, cut into 1/2-inch pieces
2 c low-soium beef stock, divided
1 pt guiness stout beer

Steps:

  • 1. Preheat oven to 375°F.
  • 2. Heat olive oil in a large Dutch oven or stockpot set over medium-high heat. Season ribs with salt and pepper and sear in Dutch oven until browned, about 5 minutes per side. Remove ribs from pot and set aside.
  • 3. Add onion and garlic to the same pot and saute until browned. Scrape any browned bits from bottom of pot using a wooden spoon. Add carrots and celery to the pot and cook for 5 more minutes. Add 1 cup of the beef stock and scrape bottom to loosen remaining browned bits.
  • 4. Return ribs to the pot, and add remaining 1 cup of stock and the beer. Season with salt and pepper. Bring to a simmer, and cook uncovered for 20 minutes.
  • 5. Cover pot, and braise in preheated oven for 2 hours.

Tips:

  • Sear the short ribs: Searing the short ribs before braising them adds flavor and color to the dish.
  • Use a good quality Guinness: The Guinness adds a rich, dark flavor to the braising liquid. Be sure to use a fresh, high-quality Guinness for the best results.
  • Braise the short ribs until they are fall-apart tender: The short ribs should be cooked until they are fall-apart tender, which will take about 2-3 hours.
  • Serve the short ribs over mashed potatoes or egg noodles: The short ribs can be served over a variety of sides, but mashed potatoes or egg noodles are classic choices that will help to soak up the delicious braising liquid.

Conclusion:

Beef and Guinness short ribs are a delicious and hearty dish that is perfect for a special occasion or a casual get-together. The short ribs are braised in a flavorful Guinness-based sauce until they are fall-apart tender, and they are served over mashed potatoes or egg noodles.
