1 1/2 Tbsp cornstarch
2 Tbsp peanut oil
1 tsp fresh ginger, minced
2 Tbsp water
1/2 lb broccoli florets
1 red bell pepper, chopped
1/2 cup snow peas, ends off + deveined
1/4 cup water chestnuts, drained
1 Tbsp garlic, minced
1/8 cup reduced-sodium soy sauce
juice from 1 large orange (about 1/2 cup)
1/2 tsp crushed red pepper

Steps:

  • 1. Season beef with salt and pepper. Lightly coat cornstarch over beef on both sides. 2. Heat peanut oil in a wok or a large skillet over medium-high heat. Add beef and ginger then stir-fry for 1-2 minutes. Transfer beef to a bowl, cover with foil or plastic wrap and set aside. 3. Turn heat down to medium and add water to the hot wok. Add broccoli, bell pepper, snow peas, water chestnuts and garlic then carefully cover top with foil and steam for 2-3 minutes or until broccoli is tender. Stir. 4. Pour soy sauce, orange juice, water and red pepper into the wok and bring to boil. Return the cooked beef and stir until sauce thickens, about 2-3 minutes.

Tips:

  • Choose a good cut of beef: Flank steak, skirt steak, and sirloin steak are all good choices for stir-fry. Make sure the beef is thinly sliced against the grain for more tender results.
  • Tenderize the beef: You can tenderize the beef by marinating it in a mixture of soy sauce, rice wine, and cornstarch for at least 30 minutes before cooking.
  • Use a hot wok or skillet: A hot wok or skillet will help to sear the beef and vegetables quickly, resulting in a more flavorful dish.
  • Cook the beef in batches: If you're cooking a large amount of beef, cook it in batches so that it doesn't overcrowd the pan and steam instead of sear.
  • Add the vegetables towards the end of cooking: The vegetables should be cooked just until tender-crisp. If you add them too early, they will become mushy.
  • Use a flavorful sauce: The sauce is what really makes this dish. Be sure to use a sauce that you enjoy the taste of.
  • Serve over rice: Beef and broccoli is traditionally served over rice. However, you can also serve it over noodles or your favorite grain.

Conclusion:

Beef and broccoli stir-fry is a quick and easy weeknight meal that is packed with flavor. It's a great way to use up leftover beef, and it's also a healthy and affordable option. With a few simple tips, you can make a delicious beef and broccoli stir-fry that your family and friends will love.
