- Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a large bowl, whisk together both flours, baking powder, baking soda, cinnamon, and salt. - 1. Preheat oven to 350. Line 30 to 36 regular size muffin pans with cupcake papers. In large bowl, sift together the first five ingredients. Stir in the next five ingredients and mix well.
- 2. In a seperate bowl, combine last three ingredients and mix well. Add to flour mixture & stir until blended.
- 3. Fill liners 2/3to 3/4 full and bake at 350 for approximately 30 to 35 minutes or until done.
- 4. Note: the recipe states that this will also yield 50-75 miniature muffins. Sometimes I make both sizes which yields approximately 30 regular and 18 to 20 mini muffins.
