This is a very tasty soup to start your meal with. My daddy loved this dish and would sometimes make a meal of it. I think of him everytime I make this. So I am posting this recipe in honor of his memory. I miss you, daddy.

SOUP:
5 1/2 oz green onions
water
salt and pepper
bacon drippings
HUSHPUPPIES:
1/2 c cornmeal
1/4 c self rising flour
1/8 tsp salt
1 can(s) beer

Steps:

  • 1. Green Onion Soup: Remove onions from package, wash, cut off end roots and cut approximately 2" in length. Use the green and white parts of the onions.
  • 2. Place in medium sized pot and cover with water. Add salt and pepper to taste. Add in about one tablespoon of bacon drippings (or oil if you rather).
  • 3. Boil for an hour or so or until tender. To serve, dip onions with broth into a bowl and break up hushpuppies into the soup.
  • 4. My Husband's Hushpuppies: In a small bowl mix in cornmeal, flour and salt. Add in enough beer to make it a tad bit soupy but not too soupy. Normally 1/2 to 2/3 can of beer is all you need. Do not overmix. Now drink the remaining beer.
  • 5. Don't stir anymore. Just let it set for about 10 minutes undisturbed. ***NOTE***: You can use tap water rather than beer.
  • 6. Heat shortening or oil. Stir a couple of times and then drop batter into hot grease by a tablespoon. Once they have fried for a few seconds, flip them over. Continue frying until golden brown.

1 pound fresh green beans, trimmed
1 pinch salt
4 tablespoons extra-virgin olive oil
1 medium onion, finely diced
1 shallot, chopped
½ teaspoon garlic salt
½ teaspoon soy sauce
salt and ground black pepper to taste

Steps:

  • Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt; boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.
  • Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.

Whenever I have a fish fry, I have to have hushpuppies on the side. These are served with honey butter, but they are also great with tartar sauce. If you're a purist, I've included a plain version in addition to a fun Low Country twist with fresh okra in the batter.

Vegetable or canola oil, for frying
1 1/2 cups self-rising cornmeal
1/2 cup self-rising flour
1 tablespoon Miss Brown's House Seasoning, recipe follows
1/2 teaspoon baking powder
1/2 sweet onion, cut into large chunks
1 large egg
3/4 cup buttermilk
3/4 cup thinly sliced okra
Nonstick cooking spray, for the cookie scoop
1 stick (8 tablespoons) salted butter, at room temperature
1/4 cup honey
Kosher salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon freshly ground pepper

Steps:

  • For the hushpuppies: Pour enough oil to reach 3 inches up the sides of a Dutch oven. Heat the oil to 375 degrees F.
  • Combine the cornmeal, flour, House Seasoning and baking powder in a medium bowl. Pulse the onions in a food processor until finely minced. Add to the cornmeal mixture and stir to combine. Add the egg and enough buttermilk to moisten into a batter. Separate half of the batter to another bowl, then stir the okra into one of the batters. (Make sure the batter isn't too thin. It should hold its shape when scooped out with a spoon.)
  • Arrange some paper towels in a baking sheet and place a wire rack on top. Working in batches, drop heaping teaspoonfuls of each batter into the hot oil using a cookie scoop coated with nonstick cooking spray, and cook until golden brown, 2 to 2 1/2 minutes depending on the size (see Cook's Note). Drain the hushpuppies on the wire rack.
  • Meanwhile, make the whipped honey butter: Beat the butter and honey in a bowl with a hand mixer at medium-high speed until light and fluffy. Season with salt. Serve with the hushpuppies.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container.

1 cup milk

Steps:

  • Pour vegetable oil into a deep fryer or heavy-bottomed pot until the oil is 3 to 4 inches deep.
  • Heat the oil to 350°F.
  • In a medium bowl, stir together the cornmeal, flour, baking powder, onion, salt, and ground red pepper.
  • Add the milk and stir to combine.
  • Drop heaping spoonfuls of the batter into the hot oil. Fry only a few at a time for best results. If you add too many at once the oil temperature may drop and they make not cook well.
