1 pound green beans, stem ends trimmed
4 teaspoons olive oil
2 garlic cloves, minced
2 teaspoons grated lemon zest
1 tablespoon freshly squeezed lemon juice
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • In a large pot of boiling salted water, cook green beans until crisp-tender, about 5 minutes. Drain.
  • In same pot, heat 2 teaspoons oil over medium-low. Add garlic; cook until starting to soften, about 2 minutes. Return beans to pot. Add lemon zest and juice, remaining 2 teaspoons oil, and parsley; season with salt and pepper. Toss to coat. Serve immediately.

2 lbs fresh green beans, trimmed
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups chicken broth
2 egg yolks
1/2 cup milk
1 cup fresh parsley, minced

Steps:

  • Place beans in a large saucepan and cover with water; bring to a boil.
  • Cook, uncovered, for 8-10 minutes or until crisp tender.
  • Meanwhile, in a large skillet, melt butter over medium heat.
  • Stir in the flour, salt and pepper until smooth. Gradually whisk in broth. Bring to a boil; cook and stir for 1-2 minutes or until thickened.
  • Remove from the heat.
  • In a small bowl, combine egg yolks and milk.
  • Stir a small amount of hot broth mixture into egg mixture.
  • Return all to the pan, stirring constantly.

7 Manila clams

Steps:

  • Season grouper with salt and pepper. Heat oil in a nonstick pan. Sear grouper until golden brown. Turn fish and finish cooking;

2 (19 ounce) cans fava beans (use fresh if you have them, take off the pods and boil them until tender, cool and then slip off the)
3 tablespoons olive oil
3 large onions, chopped
5 cloves garlic, minced
2 tablespoons hot red pepper flakes
1/4 cup tomato sauce
3/4 cup hot water
3 tablespoons fresh parsley, chopped
salt & pepper
2 teaspoons Hungarian paprika
