2 tablespoons olive oil
4 cloves garlic, peeled and chopped
1 onion, chopped
6 cups chicken broth
1 (15.5 ounce) can cannellini beans, drained and rinsed
1 cup ditalini or other small pasta
1 (10 ounce) bag baby spinach, rinsed and dried
salt and black pepper to taste

Steps:

  • Heat the olive oil in a large stockpot over medium heat. Stir in the garlic and onions; cook and stir until the onions are transparent, 8 to 10 minutes. Add the chicken broth, increase the heat to high, and bring the mixture to a boil.
  • Stir in the beans and pasta; lower heat to medium, and simmer, uncovered, until the pasta is al dente, or 8 to 10 minutes. Add the spinach and stir just until wilted. Season with salt and pepper to taste.

12 ounces mild Italian sausage, casings removed
3 large garlic cloves, minced
1 tablespoon rubbed dried sage
3 (15 1/2 ounce) cans cannellini beans, rinsed and drained
3 (14 1/2 ounce) cans chicken broth
4 cups water
1 cup macaroni
1 (6 ounce) bag baby spinach leaves, stems removed
1 tablespoon red wine vinegar
1/8 teaspoon salt
1/4 teaspoon ground black pepper
grated pecorino romano cheese

Steps:

  • Preparation:.
  • Crumble the sausage into a large cold pot. Cook over medium-high heat, turning occasionally, for about 3 minutes, or until browned. Remove with a slotted spoon, set aside. Pour off and discard any drippings. Add the garlic and sage.
  • Cook for about 1 minute, or until fragrant. Add the beans, broth and water. Increase the heat to high and bring just to a boil. Scrape up the browned bits at the bottom of the pot.
  • Reduce the heat to medium-low. Cover partially and simmer for 15 minutes.
  • Transfer about half of the beans and enough broth to cover, to a blender or food processor. Purée and return to the pot. Add the macaroni and the reserved sausage.
  • Simmer for about 5 minutes, or until the pasta is al dente. Stir in the spinach, vinegar, salt and the pepper. Sprinkle with Pecorino Romano at the table.

1 leftover turkey carcass (from a 12-pound turkey)
9 cups water
2 celery ribs, cut into 1/2-inch pieces
1 medium onion, cut into chunks
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3 tablespoons chopped onion
2 teaspoons chicken bouillon granules
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place turkey carcass in a stockpot; add water, celery and onion. Slowly bring to a boil. Reduce heat; simmer, covered, 2 hours. , Remove carcass and cool. Strain broth through a cheesecloth-lined colander; discard vegetables. Skim fat. Remove meat from bones and cut into bite-sized pieces; discard bones. Return broth and meat to pot., Add beans, spinach, chopped onion, bouillon, salt and pepper. Bring to a boil. Reduce heat; simmer, covered, 10 minutes.

I was looking for something to try my packet of Willie's beans and peas seasoning on. We had this tonight and it was wonderful.

1 pkg willie's beans and peas seasoning packet
1 c pinto beans, dry
1 c split peas, dry
1 medium onion, chopped
1/2 a green pepper, diced
2 c chopped bok choy (green and white parts)
1 c spinach, fresh, chopped
2 Tbsp garlic, heaping
salt and pepper to taste

Steps:

  • 1. Put the pinto beans and the peas into a bowl and pour over them at least 2 times as much water and let it sit 4 hours.
  • 2. Take that and pour into a crock pot. Add the rest of the ingredients minus the spinach and the bok choy. Add 3 or so more cups of water. cook on low for 6 hours. Add the bok choy and the spinach cook two more hours and serve.
