1 cup water
1/2 cup frozen corn
1 cup chopped lettuce
1/4 cup roasted sweet red peppers, drained and coarsely chopped

1 teaspoon minced fresh parsley
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a small saucepan, bring lima beans and water to a boil. Reduce heat; cover and simmer for 5 minutes. Add corn; simmer 4-5 minutes longer or until vegetables are tender.
