1/4 cup chopped onion
1/4 cup fresh baby carrots, cut into 1/4-inch slices
1 can (15 ounces) pinto beans, rinsed and drained
1 cup chicken broth
1 cup chunky salsa
1/3 cup self-rising flour
2 tablespoons cornmeal
1/8 teaspoon salt
1/4 cup 2% milk
2 tablespoons shredded cheddar cheese

Steps:

  • In a large saucepan coated with cooking spray, saute onion and carrots until tender. Stir in the beans, broth and salsa. Bring to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until reduced slightly., For dumplings, in a small bowl, combine the flour, cornmeal and salt. Stir in milk and cheese just until moistened. Drop by tablespoonfuls onto simmering soup. , Cover and simmer for 15 minutes or until a toothpick inserted in the center of a dumpling comes out clean (do not lift cover while simmering).

1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) Mexican stewed tomatoes
1 can (4 ounces) chopped green chilies
2 cups frozen corn, thawed
1 cup chopped onion
1 cup chopped carrots
3 beef bouillon cubes
3 garlic cloves, minced
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
DUMPLINGS:
1/2 cup all-purpose flour
1/4 cup yellow cornmeal
1 teaspoon baking powder
Dash each salt and pepper
1 egg white, beaten
3 tablespoons milk
1 tablespoon canola oil

Steps:

  • In a large saucepan over medium heat, combine the first 13 ingredients; bring to a boil. Reduce heat; cover and simmer for 1 hour or until vegetables are tender. , For dumplings, combine flour, cornmeal, baking powder, salt and pepper. 1 bunch Basil
4 ozs Quark (or Greek yogurt)
1 egg
3 Tbsps breadcrumbs (about 30 grams)
3 Tbsps grated Parmesan (about 25 grams)
salt
Nutmeg
1 onion
1 pc Celery root (about 80 grams)
1 Tbsp olive oil
1 tsp ground Cumin
1 small lemon
14 ozs White bean (canned)
1 Tbsp Tahini
peppers

Steps:

  • Rinse basil and shake dry. Reserve some small sprigs and a few large leaves for garnish. Combine the rest of the basil with the quark and egg in a bowl and puree with an immersion blender.
  • Stir in breadcrumbs and Parmesan cheese. Season with salt and freshly grated nutmeg.
  • Peel the onion and finely chop. Rinse, peel and finely dice celery root.
  • Heat oil in a pot. Add onion, celery root and cumin and sauté for 2-3 minutes. Pour in 100 ml (approximately 1/2 cup) of water, cover and cook for 5 minutes over medium heat.
  • Meanwhile, rinse lemon in hot water, wipe dry and finely grate the zest. Juice lemon.
  • Remove 4 tablespoons of beans and set aside. Add the remaining beans with the liquid to the celery mixture in the pot. Add 2-3 tablespoons lemon juice and the zest. Stir in tahini paste.
  • Add about 200 ml (approximately 3/4 cup) of water (add more if necessary) and purée with immersion blender until creamy. Heat over medium heat.
  • Use 2 teaspoons to form small dumplings (about 2 cm diameter) (approximately 3/4 inch in diameter) from the quark mixture. Carefully add to the simmering soup and cook for about 5 minutes. Add reserved beans for the last 2 minutes of cooking.
  • Cut reserved basil leaves into thin strips. Season soup with additonal lemon juice, salt and pepper as desired. Garnish with basil sprigs and chiffonade and serve.

1/4 cup fresh baby carrots, cut into 1/4-inch slices
1 garlic clove (optional)
1 (14 1/2 ounce) can pinto beans, rinsed and drained
1 1/2 cups fat free chicken broth
1 cup chunky salsa, try a roasted garlic or chipotle salsa for best results
1/2-1 teaspoon cumin
1/3 cup whole wheat flour or 1/3 cup all-purpose flour

2 tablespoons cornmeal
1/8 teaspoon salt
1/4 cup fat-free buttermilk
2 tablespoons reduced-fat cheddar cheese, shredded or grated

1 (15 1/2 ounce) can red kidney beans, rinsed and drained
1 (15 1/2 ounce) can pinto beans or 1 (15 1/2 ounce) can great northern beans, rinsed and drained
1 cooked chicken breast, shredded
3 cups water
1 (14 1/2 ounce) can Mexican-style stewed tomatoes
1 (10 ounce) package frozen whole kernel corn, thawed
1 cup sliced carrot
1 cup chopped onion
1 (4 ounce) can chopped green chilies
2 tablespoons chicken bouillon granules or 2 tablespoons vegetable bouillon granules
1 -2 teaspoon chili powder
2 garlic cloves, minced
1/3 cup flour
1/4 cup yellow cornmeal
1 teaspoon baking powder
1 dash salt
1 dash pepper
1 egg white, beaten
2 tablespoons milk
1 tablespoon oil

Steps:

  • Combine 11 soup ingredients in slow cooker.
  • Cover and cook on low 10 - 12 hours or high 4 - 5 hours.
  • Make cumplings by mixing together flour, cornmeal, baking powder, salt and pepper.
  • Combine egg white, milk and oil. Add to flour mixture. Stir with fork until just combined.
  • At the end of the soup's cooking time, turn slow cooker to high. Drop dumplings by rounded teaspoonfuls to make 8 mounsd atop the soup.
  • Cover and cook for 30 minutes (do not lift cover).
  • Serve topped with your choice(s) of sour cream, shredded cheddar cheese and crushed tortilla chips.

2 cups cubed potatoes
1 tablespoon olive oil
43 ounces chicken stock or 43 ounces vegetable broth
2 cups green beans
1 tablespoon chopped garlic
1/2 medium onion, chopped
1 tablespoon flour
1 tablespoon butter or 1 tablespoon margarine
24 ounces half-and-half or 24 ounces cream
dumplings
2 eggs
1 cup flour
milk

Steps:

  • In a large soup kettle, saute potatoes in oil for about 10 minutes, stirring often. Add stock and beans and cook until tender.
  • In a saucepan, melt the butter or margarine and saute the onion and garlic until translucent. Add the flour and cook for three minutes longer. With a whisk, stir in the milk and keep whisking until the mixture is thickened. Set aside.
  • While the soup is simmering, prepare the dumplings. Blend the flour and the egg. Add milk until a thick, doughy mixture is made. You can add salt to taste. Drop the dumplings by a teaspoon into the boiling broth. Whisk the milk and flour mixture into the soup. Add milk or cream as needed to adjust the consistency.
  • Note: The measurements are rather inexact. My own thought is that you probably need 3 tbsp butter and 3 tbsp flour in the roux to make a thickener that would thicken this amount of liquid adequately. The forum poster found the soup too thin. The dumplings were described as tasty, but heavy, and you might want to substitute your own favorite recipe.

I found this recipe in a cooking light magazine and thought it tasted great and was very simple to make. The only part that didn't work so well was getting my dumplings to cook as there wasn't a whole lot of liquid left after adding the beans and tomatoes. So, I am going to try adding just a little more vegetable broth or water next time so that my dumplings cook up better. I just really like the taste of this soup.

1 cup onion, chopped

  • To prepare dumplings, combine masa harina or cornmeal and 1/8 teaspoon salt in a bowl.
  • Add 3 tablespoons hot water and 1 teaspoon oil; stir until a soft dough forms (dough will be dry).
  • Divide dough into 24 pieces, shaping each into a ball. Add dumplings to soup; cook, uncovered, 3 minutes or until dumplings float.
  • Stir in cilantro and juice.
  • Ladle 1 cup soup into each of 4 bowls; top each serving with 1 tablespoon queso fresco.
