1/4 cup olive oil
2 1/2 pounds lamb from shoulder, boned and cut into 1/2-inch cubes
Salt and freshly ground black pepper
1 1/2 large Spanish onions, finely diced
6 cloves garlic, finely chopped
1 (15-ounce) can whole tomatoes, drained and pureed
1 tablespoon chipotle puree
3 tablespoons ancho chili powder
1 tablespoon pasilla chili powder
1 tablespoon ground cumin
2 teaspoons ground coriander
1 tablespoon dried Mexican oregano
5 cups chicken stock
1 (12-ounce) bottle dark beer
Dash ground cinnamon
1 to 2 tablespoons honey
2 cups cooked or canned black beans
Chopped cilantro leaves, for garnish
Cumin Crema, recipe follows
Avocado Relish, recipe follows
Red Onion Relish, recipe follows

1 pint creme fraiche, Mexican crema or sour cream
1 tablespoon ground cumin
1 tablespoon fresh lime juice
Salt and freshly ground pepper
2 tablespoons canola oil
2 red onions, finely diced
1 tablespoon minced garlic
1 serrano chile, finely diced with seeds
1/4 cup freshly squeezed lime juice
Salt and pepper
3 tablespoons finely chopped cilantro leaves
4 Haas avocados, peeled, pitted and chopped
1/2 cup red onion, minced
1/2 cup chopped cilantro leaves
2 serrano chiles, minced with seeds
2 limes, juiced

3 cups all-purpose flour
1 tablespoon baking powder
2 tablespoons dry milk powder
2 teaspoons salt, plus more for seasoning after frying
5 tablespoons cold vegetable shortening
1 1/2 cups water
2 cups canola oil, for frying

Steps:

  • Heat the oil in a medium saucepan over high heat. Add the lamb, in batches, season with salt and pepper, and cook until seared and browned on all sides. Remove the lamb to a plate with a slotted spoon.
  • Add the onion to the pan and cook until soft. Add the garlic and cook for 1 minute. Add the tomatoes, chipotle, and spices. Return the lamb to the pan, add the stock and beer; cover and cook at a simmer for over medium heat, about 1 hour, or until the lamb is tender and the mixture has thickened. After 30 minutes, check seasoning and add honey. During the last 15 minutes, add the cinnamon and cooked beans. Season with salt and pepper, to taste. Sprinkle with chopped cilantro. Ladle into bowls and top with a large dollop of Cumin Crema, Avocado Relish, and Red Onion Relish. Serve with fry bread on the side.
  • Whisk together ingredients in a bowl. Season with salt and pepper, to taste. Cover and refrigerate for at least 1 hour before serving.
  • Heat oil in a large saute pan over high heat. Add the onions, garlic, and chile to the pan and cook until soft. Add the lime juice and season with salt and pepper. Remove from the heat and stir in the cilantro.
  • In a large bowl, combine avocado, red onion, cilantro, chiles, lime juice, and salt and pepper. Fold until incorporated.
  • Combine flour, baking powder, milk powder, and salt in a large bowl. Cut the shortening in until the mixture is crumbly. Add the water and mix until the dough comes together. Place on a lightly floured surface and knead lightly until smooth. Cover with a dishcloth and let sit at room temperature for 1 hour.
  • Heat the oil in a large high-sided saute pan until it reaches 350 degrees F.
  • Divide the dough into 8 pieces and roll each piece out into a 4-inch circle. Fry the bread in the hot oil until golden brown on both sides. Remove to a sheet pan lined with paper towels and season with salt.

1/4 cup canola oil
Juice of 1 lime
Juice of 1 orange
2 tablespoons ancho chile powder
1 tablespoon Spanish paprika
1 teaspoon ground cinnamon
1/4 teaspoon allspice
1/4 teaspoon chile de arbol or cayenne
1/4 teaspoon ground cloves
6 cloves garlic, finely chopped
Two 3-pound chickens, each cut into 8 pieces
Kosher salt and freshly ground black pepper
Grilled Corn, Black Bean and Quinoa Relish, recipe follows
Kosher salt and freshly ground black pepper
1/2 cup quinoa
8 green onions
2 tablespoons canola oil
8 ears grilled corn, kernels removed
1 can black beans, drained, rinsed well and drained again
1/4 cup extra-virgin olive oil
Juice of 1 lime
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh oregano

Steps:

  • Whisk the rice vinegar, canola oil, lime juice, orange juice, ancho, paprika, cinnamon, allspice, chile de arbol, ground cloves and garlic in a bowl.
  • Place the chicken pieces on a large baking dish. Pour the vinegar mixture over the chicken and rub it into each piece of chicken. Cover the chicken and refrigerate for at least 4 hours and up to 8 hours. Remove the chicken from the refrigerator 30 minutes before grilling.
  • Remove the chicken from the vinegar mixture and place on a baking sheet.
  • Heat a grill for indirect grilling. Add the wood chips to the coals or to a box and place on the gas briquettes. Close the grill cover and heat the grates, about 10 minutes.
  • Place the chicken over the direct heat, skin-side down. Grill the chicken until golden brown and slightly charred, about 5 minutes. Flip the chicken and cook 5 minutes longer. Move the chicken to the cooler part of the grill, close the grill cover and continue grilling until an instant-read thermometer inserted into the chicken registers 160 degrees F for white meat and 165 degrees F for dark meat, about 15 minutes. Transfer the chicken to a platter and loosely tent with foil.
  • After 5 minutes of rest, serve the chicken with the Grilled Corn, Black Bean and Quinoa Relish.
  • Bring 1 cup water to a boil in a small pot over medium heat. Add 1 teaspoon salt and 1/4 teaspoon pepper and stir in the quinoa. Cover the pot and cook until the quinoa is tender and the water is absorbed, about 15 minutes. Remove the pot from the heat and let sit covered. Fluff the quinoa with a fork and transfer to a large bowl.
  • Heat the grill to high for direct grilling. Brush the green onions with the canola oil and sprinkle with salt and pepper. Grill the onions until soft and slightly charred, about 2 minutes each side. Remove the onions from the grill and coarsely chop.
  • Stir the corn, beans, olive oil and lime juice in a bowl. Add the quinoa and chopped green onions. Sprinkle with salt and pepper. Keep the relish at room temperature for at least 30 minutes before serving to allow the flavors to meld. Stir in the cilantro and oregano and serve.

Unfortunately, she didn't have a recipe and I couldn't find one on the Internet, so I looked at the ingredients on a jar of sweet cucumber relish and this is what I came up with...

2 lbs mixed green and yellow beans (fresh or frozen)
4 large onions
1 1/2 cups light brown sugar, firmly packed
3 tablespoons Dijon mustard
1 1/2 cups white vinegar
2 tablespoons cornstarch
3/4 cup water

Steps:

  • Finely chop beans and onions. (Cut into large pieces first & then use high speed on food processor.).
  • Combine first 5 ingredients in a large pan, and simmer 30 minutes on low heat, stirring occasionally.
  • Mix water and cornstarch.
  • Increase heat until mixture boils, stirring frequently, and stir in cornstarch to thicken.
  • Ladle hot mixture into sterilized canning jars, leaving 1" of head space. Use non-metal spatula to remove air bubbles. Apply snap lids and finger tighten bands.
  • Can be stored in the fridge 'as is', or can be processed with a pressure canner (canning time included in total cooking time given below.)
  • Pressure process at 10 lbs:
  • 20 minutes for 1/2 pint and pint jars, 25 minutes for quart jars.

1 bottle dark beer
5 cups homemade chicken stock, or canned low-sodium or water
1 (16-ounce) can chopped tomatoes, drained and pureed
1 tablespoon chipotle pepper puree
1 tablespoon honey
2 cups cooked or canned black beans, rinsed and drained
2 tablespoons fresh lime juice
Toasted Cumin Crema,
1 tablespoon cumin seed
1 cup Mexican crema or creme fraiche
Salt and freshly ground black pepper
AVOCADO RELISH
2 ripe Hass avocados, peeled, pitted and diced
1/2 small red onion, finely diced
1 jalapeno or serrano chile, finely diced
Lime juice
Chopped cilantro leaves
Salt and pepper

Steps:

  • Heat oil in a large Dutch oven over high heat. Season the beef with salt and pepper, and saute until browned on all sides. Transfer the meat to a plate and remove all but 3 tablespoons of the fat from the pan. Add the onions to the pan and cook until soft. Add the garlic and cook for 2 minutes. Add the ancho powder, pasilla powder, and cumin and cook an additional 2 minutes. Add the beer and cook until completely reduced. Return the beef to the pot, add the chicken stock, tomatoes, chipotle puree, and honey, and bring to a boil. Reduce the heat to medium, cover the pan, and simmer for 45 minutes. Add the beans and continue cooking for 15 minutes. Remove from the heat, add the lime juice, and adjust seasonings. Serve with a dollop of Toasted Cumin Crema and Avocado Relish TOASTED CUMIN CREMA Place the cumin in a small saute pan over medium heat. Toast until lightly golden brown. Place in a small bowl. This relish (otherwise known as a salsa) has its roots all over Latin America and the Caribbean. Use freshly roasted sweet corn for best results, but canned or frozen corn can be used during those times when fresh corn is unavailable.

3 ears fresh sweet corn (or 1 cup frozen corn)
2 Tbsp butter
1 15-oz can(s) black beans, drained
2 tomatoes, seeded and chopped
2 scallions, finely chopped
3 Tbsp olive oil
1 Tbsp red wine vinegar
salt and freshly ground pepper, to taste

Steps:

  • 1. Carefully peel back the corn husks and remove the "silk" from inside. Soak the corn in a large bowl of cold water for 30 minutes. Drain the corn and pat dry.
  • 2. Rub the butter over the corn kernels and fold the corn husks back into place around the cob.
  • 3. Grill over hot coals or under a preheated broiler for 15 to 20 minutes, turning about every 5 minutes.
  • 4. Allow to cool, peel the husks and cut the corn off the cobs. Combine with the remaining ingredients in a mixing bowl and toss to combine.
  • 5. Chill for at least 1 hour before serving.

2 cans (15 1/4 oz) whole kernel corn, drained
1 can (15oz) black beans, rinsed and drained
1 green bell pepper, chopped
1 red bell pepper, chopped
1 jalapeno pepper, chopped
1 red onion, chopped
1 tsp minced garlic
1 jar (2 oz) diced pimientos, drained
1/2 c sugar
3/4 c white vinegar
1/3 Tbsp canola oil
1/2 tsp celery seed
1/2 tsp salt
1/2 tsp yellow mustard seed

Steps:

  • 1. Mix corn, black beans, peppers, onion and pimientos in a medium bowl with lid.
  • 2. Place vinegar, sugar, garlic, celery seed, salt and mustard seed in a small saucepan. Heat on medium low heat stirring occasionally. Bring to a slow boil and boil 2 minutes. Pour over corn mixture.
  • 3. Mix well, cover and refrigerate 3 or 4 hours. Should keep for @ a week if refrigerated well.
  • 4. Can be served as a dip with tortilla chips or as an embelishment to pinto beans, black-eyed peas, etc.

4 (7 ounce) halibut steaks
salt and ground black pepper to taste
4 ounces bacon, cut crosswise into 1/4-inch pieces
8 ounces fresh green beans, tips trimmed, sliced into 1/8-inch pieces
1 pinch salt
1 tablespoon water
2 tablespoons lemon juice
salt and freshly ground pepper to taste

Steps:

  • Season halibut steaks generously with salt and black pepper. Refrigerate until needed.
  • Place bacon in a skillet and cook over medium heat. When bacon is about half cooked, 4 to 6 minutes, stir in beans and pinch of salt. Cook, stirring, until bacon is crisp and beans are almost tender, 4 to 6 minutes. Transfer bacon and beans to a bowl and return skillet with bacon drippings to the stove over medium-high heat.
  • When bacon drippings just begin to smoke, place 2 halibut steaks in the skillet; cook until browned and meat is just starting to pull away from the bone, about 4 minutes per side. Transfer steaks to a plate and repeat for remaining 2 steaks.
  • Remove skillet from heat and pour in water; bring to a boil while scraping any browned bits off the bottom of the pan. Return beans and bacon to the skillet and stir in lemon juice; cook and stir 1 to 2 minutes. Season with salt and pepper to taste. Spoon hot bean and bacon relish over halibut steaks and serve.

2 1/2 lbs green beans, sliced 1/4 inch (two quarts)
2 cups chopped onions
1 1/2 cups chopped celery
3 cups white distilled vinegar
2 cups firmly packed light brown sugar
1/4 cup flour
1/4 cup dry mustard
1 1/2 teaspoons ground turmeric
1 1/2 cups cold water
1 1/2 teaspoons celery seeds

Steps:

  • Cook vegetables in lightly salted boiling water until tender, about 30 minutes.
  • Drain and discard liquid.
  • In separate saucepan combine vinegar and sugar and bring up to a boil.
  • Meanwhile combine flour, mustard and tumeric with cold water and stir slowly into hot vinegar mixture.
  • Add celery seed and simmer 20 minutes, stirring occasionally.
  • Add vegetables and simmer 10 minutes, stirring occasionally.
  • Continue to simmer while you pack into prepared (sterilized) jars filling to within 1/2" of the top making sure vinegar solution covers the vegetables.
  • Cap.
  • Process in boiling water bath five minutes.

1/4 cup white vinegar

1/2 pint grape tomatoes halved
1 tablespoon finely diced red onion
1 tablespoon chopped basil
1 teaspoon olive oil
1 teaspoon balsamic vinegar
White Bean Puree
1 15 oz can of Cannellini Beans rinsed and drained
1 tablespoon olive oil
1 hals small red onion diced
1 clove garlic chopped
1/2 cup vegetable stock
Parmesan Crusted Chicken
1 pack of thinly sliced chicken breast
1 egg beaten
1/2 cup seasoned italian style bread crumbs
1/2 cup grated parmesan cheese.

Steps:

  • For Tomato Relish, Put all ingredients in a small bowl and season with salt and pepper. set aside to allow flavors to combine. To make puree Heat olive oil on medium heat in a medium pan. Add onion and sautee about 5 minutes or until tender. Add garlic and cook another 2 minutes. Add white beans and stock to pan. Simmer for 5 minutes. Transfer bean mixture to food processor and pulse until mixture is smooth and creamy. For Chicken, Place beaten egg in a shallow dish and set aside. In another dish, mix the bread crumbs and grated parmesan cheese. Season chicken breast with salt and pepper. Heat 1/2 inch olive oil in a large skillet. Dredge chicken in egg. shake off excess egg and coat chicken in parmesan and bread crumb chicken. Place chicken in oil and cook approximately 3 to 4 minutes on each side depending on thickness of chicken breast. Drain on paper towel. To assemble, spoon 2 heaping tablespoons of white bean puree on plates, top with chicken breast and garnish with tomato relish.

2 tablespoons extra-virgin olive oil, plus more for garnish
1 medium onion, chopped
3 cloves garlic, finely chopped
3 sprigs fresh thyme
One 4-inch sprig fresh rosemary
Two 15-ounce cans white beans, such as cannellini
2 teaspoons coarse salt, plus more as needed
Freshly ground black pepper
Pinch of cayenne pepper
2 tablespoons tahini (sesame paste)
2 teaspoons freshly squeezed lemon juice
4 pita breads, warmed and cut into triangles
Kalamata Relish

Steps:

  • Heat the oil in a large skillet over medium heat. Add the onion, garlic, thyme, and rosemary. Cook until onions are translucent, 5 to 6 minutes. Add beans with their liquid, 1 cup of water, salt, pepper, and cayenne, and bring to a simmer. Cook until liquid is nearly evaporated, about 8 to 10 minutes. Remove thyme and rosemary sprigs; discard. Carefully transfer mixture to the bowl of a food processor, add the tahini and lemon, and puree until smooth. Adjust seasoning, if necessary. Transfer to a serving bowl, let cool.
  • Top with Kalamata relish and drizzle with olive oil before serving. Serve with pita triangles.

1/4 medium red pepper, cut into 1/4 inch dice
1/4 medium onion, cut into 1/4 inch dice
1 medium jalapeno pepper, seeded and finely diced
1/4 cup key lime juice
3/4 cup loosely packed cilantro leaf, coarsely chopped
1 cup frozen corn, defrosted
1/4 teaspoon cumin

  • Mix all ingredients together in a large non-reactive bowl.

8 oz dry black beans (about 1 ˝ cups)
3 cups cold water
3/4 tsp salt
1 small yellow onion, finely chopped
2 small jalapeno peppers
1 ear sweet corn, husked with kernels cut off the cob
1 small red onion, diced
3 tbsp of Canary Island Garlic and Herb "HOT" SPLASH
3 Tbsp red wine vinegar
4 cloves garlic, finely chopped
1 tsp chili powder
1/2 tsp hot pepper sauce
1 medium tomato, coarsely chopped
3/4 cup fresh cilantro, coarsely chopped

Steps:

  • Sort the beans, wash under cold water. Drain. Combine with water, salt & yellow onions in large saucepan. Bring mixture to a boil over high heat, reduce to low, cover and cook 1-1/2 hours. Do not drain. Set aside, covered, for about 10 minutes. Chop peppers. While beans are still hot, add peppers, corn, red onion, vinegar, garlic, chili powder & hot pepper sauce. Mix well. Set aside until cool. Add a small dash of the "HOT Splash before you serve as a re fresher for the flavor and you are goooood to go! Mix in tomatoes & cilantro.
