1 quart low-sodium tomato juice
4 tablespoons lime juice
2 teaspoons reduced-sodium Worcestershire sauce
1 16-ounce can stewed, no-salt-added tomatoes
2 cups cucumber, peeled, seeded and chopped

Serve with crusty multigrain bread or rolls.

Tips:

  • Use ripe, fresh tomatoes: The riper the tomatoes, the sweeter and more flavorful your gazpacho will be.
  • Chill your ingredients: Chilling your ingredients before assembling the gazpacho will help it stay cold and refreshing.
  • Use a food processor or blender: A food processor or blender will help you quickly and easily puree the ingredients for your gazpacho.
  • Don't over-process the ingredients: You want your gazpacho to have a bit of texture, so don't over-process the ingredients.
  • Season to taste: Add salt, pepper, and other seasonings to taste until you're happy with the flavor of your gazpacho.
  • Chill for at least 2 hours before serving: This will allow the flavors to meld and the gazpacho to get nice and cold.
  • Garnish with your favorite toppings: Some popular toppings for gazpacho include croutons, chopped cucumber, chopped onion, and chopped cilantro.
