1-1/2 cups uncooked instant brown rice
1 medium green pepper, diced
1/2 cup chopped onion
1 tablespoon olive oil
1 teaspoon minced garlic
1 tablespoon chili powder
1 teaspoon ground cumin
1/8 teaspoon crushed red pepper flakes
1 can (15 ounces) black beans, rinsed and drained
8 flour tortillas (8 inches), warmed
1 cup salsa
Optional toppings: Reduced-fat shredded cheddar cheese and reduced-fat sour cream

Steps:

  • In a small saucepan, bring water to a boil. Add rice. Return to a boil. Reduce heat; cover and simmer for 5 minutes. Remove from the heat. Let stand until water is absorbed, about 5 minutes. , Meanwhile, in a large skillet, saute green pepper and onion in oil until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Stir in the chili powder, cumin and pepper flakes until combined. Steps:

1 Hass avocado, halved, seeded, and diced

1 to 2 jalapenos, or 1 serrano chile, stemmed and minced (with seeds for maximum heat)
1/3 cup chopped fresh cilantro leaves
1 teaspoon kosher salt
3 tablespoons extra-virgin olive oil
1/2 medium onion, finely chopped
3 cloves garlic, minced
1 teaspoon kosher salt
1 (19-ounce) can pinto beans, rinsed and drained
4 extra-large (12-inch) whole wheat flour tortillas
1 bunch watercress, stemmed, optional

Steps:

  • For the rice: Bring the water to a boil over high heat in a medium saucepan with a tight fitting lid. Stir in the wild rice and 1 teaspoon of the salt.
