Kosher salt and freshly ground pepper
1 stick unsalted butter, room temperature
1/4 cup chopped flat-leaf parsley
1 loaf French bread or ciabatta, cut in half horizontally

Categories     side-dish

Time 45m

Yield 8 servings

Number Of Ingredients 9

12 tablespoons (1 1/2 sticks) unsalted butter
1 head garlic, cloves separated and peeled
1 cup freshly grated Italian Parmesan cheese
2 tablespoons minced fresh parsley
2 teaspoons grated lemon zest
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 (20 to 24-inch-long) crusty French baguette
Fleur de sel or sea salt

Steps:

  • Preheat the oven to 450 degrees F. (Make sure your oven is clean or it will smoke!)
  • Melt the butter in a small saucepan over low heat. Add the garlic, stir to coat with the butter, and cook, covered, for 20 minutes, stirring occasionally, until the garlic is very tender. Transfer to a small bowl and set aside until cool enough to handle. Mash the garlic in the butter with a fork. Stir in the Parmesan, parsley, lemon zest, red pepper flakes, 1 1/2 teaspoons kosher salt, and 1/2 teaspoon black pepper.
  • Slice the baguette in half lengthwise and place both halves, cut sides up, on a cutting board. Score each half diagonally (don't cut all the way through) in large serving-size pieces. Spoon all of the garlic mixture generously on the cut sides of the bread. Cut each half of the baguette in half crosswise along a score and place the 4 pieces on a sheet pan lined with parchment paper.
  • Bake for 5 to 7 minutes, until the topping is bubbly and starting to brown and the bread is crisp. Transfer to a board, cut in serving pieces along the scores, sprinkle with fleur de sel, and serve warm.

8 slices of rustic bread

1 garlic clove, peeled and sliced in half (optional)
Butter (optional)

  • Preheat a grill to medium-high heat (375 to 450 degrees).
  • Brush each side of the bread lightly with olive oil. Place the slices on a baking sheet and sprinkle with 1 pinch of salt on top of each. Grill 1 to 2 minutes per side, until crispy and just starting to char on the edges.
  • Remove from the heat. If desired, rub each slice with the cut side of the garlic and a bit of butter or additional olive oil (we rubbed on a small pat of butter between all the slices). Add another sprinkle of kosher salt if serving plain as garlic bread, and top with chopped herbs if desired.

Tips:

  • Use a good quality bread. A nice crusty loaf, such as sourdough or French bread, will give your garlic bread a great flavor and texture.
  • Don't be afraid to use plenty of garlic. The more garlic you use, the more flavorful your garlic bread will be.
  • Use fresh herbs, if possible. Fresh herbs, such as parsley, basil, and oregano, will add a lot of flavor to your garlic bread.
  • Don't overcook the garlic bread. Garlic bread is best when it is slightly golden brown and crispy on the edges.
  • Serve the garlic bread warm. Garlic bread is best enjoyed when it is warm and fresh out of the oven.
