4 pounds bone-in, skin-on chicken parts (legs, thighs, wings, breasts)
Salt
Extra virgin olive oil or vegetable oil
1 cup barbecue sauce, store-bought or homemade

Steps:

  • Prepare the grill: Prepare one side of your grill for high, direct heat. If you are using charcoal or wood, make sure there is a cool side to the grill where there are few to no coals.
  • Sear a final time, then remove from heat: If you want, you can finish with a sear on the hot side of the grill. To do this, put the pieces, skin side down, on the hot side of the grill. Allow them to sear and blacken slightly for a minute or two.

1 (3 pound) whole chicken
1 pinch salt
¼ cup butter, melted
1 tablespoon salt
1 tablespoon paprika

  • Season the inside of the chicken with a pinch of salt. Place the chicken onto a rotisserie and set the grill on high. Cook for 10 minutes.

Close the lid and cook for 1 to 1 1/2 hours, basting occasionally, until the internal temperature reaches 180 degrees F (83 degrees C) when taken in the thigh with a meat thermometer.
  • Remove from the rotisserie and let stand for 10 to 15 minutes before cutting into pieces and serving.

Tips:

  • To ensure even cooking, choose a whole chicken that is evenly shaped and has no large pockets of fat.
  • Use a flavorful brine to help the chicken absorb moisture and flavor. You can brine the chicken for up to 24 hours, but 4-8 hours is usually sufficient.
  • Pat the chicken dry before cooking to help the skin crisp up.
  • When grilling the chicken, start with the breast side up. This will help the breast meat cook evenly with the dark meat.
  • Cook the chicken over indirect heat for most of the cooking time. This will help prevent the chicken from drying out.
  • Use a meat thermometer to check the internal temperature of the chicken. The chicken is done cooking when the internal temperature reaches 165 degrees Fahrenheit.
  • Let the chicken rest for 10-15 minutes before carving and serving. This will help the juices redistribute throughout the chicken.

Grilling a whole chicken on a gas grill is a great way to cook a delicious and flavorful meal. By following these tips, you can ensure that your chicken is cooked perfectly and evenly. So next time you're looking for a delicious and easy grilled chicken recipe, give this one a try!
