1 cup balsamic vinegar
3/4 cup ketchup
1/3 cup brown sugar
1 garlic clove, minced
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 pieces chicken (any combination of breast or leg-and-thigh pieces) or 4 pieces of New York strip or Club strip steak
Salt and freshly ground pepper

Steps:

  • For the BBQ sauce:
  • Combine all the ingredients in a small saucepan and stir until all the ingredients are incorporated and the mixture is smooth. Simmer over medium heat until reduced by 1/3, about 15 to 20 minutes.
  • For the chicken or steak:
  • Place a grill pan over medium heat or preheat a gas or charcoal grill. Season the meat with salt and pepper. Lightly coat with some of the BBQ sauce using a pastry brush. Place the meat on the grill. Place the remaining BBQ sauce, still in the small saucepan, over low heat or on the edge of a gas or charcoal grill and allow to gently simmer while the meat cooks.
  • Cook the chicken about 8 minutes per side. Cook the steaks starting at about 4 minutes per side until a meat thermometer reads the desired temperature, 120 degrees F for medium rare, 135 degrees F for medium (about 6 minutes per side), 155 degrees F for well done (about 9 minutes per side). Continually brush the meat with BBQ sauce every few minutes. Remove the meat from the grill and let rest for at least 5 minutes. Serve with the heated BBQ sauce alongside.
  • Alternately, the chicken can be baked in the oven. Preheat the oven to 375 degrees F. Place the chicken skin side up in a baking dish and bake for 25 minutes. Remove the baking dish from the oven and spoon the BBQ sauce all over the top of the chicken. Return the baking dish to the oven and bake for another 15 minutes.

2 cloves garlic, chopped
1/4 cup hoisin sauce
1/4 cup ketchup

1 tablespoon sambal oelek
2 tablespoons sesame seeds, toasted
1 teaspoon soy sauce
1 teaspoon fish sauce
1 tablespoon rice vinegar
Salt and freshly ground black pepper
4 (8-ounce) salmon steaks

  • Heat the oil in a small saucepan over medium heat. Add the shallots and garlic and cook until soft. 1 onion, finely chopped
4 cloves garlic, finely chopped
1 tablespoon red pepper flakes
3 cups canned plum tomatoes, pureed
1/4 cup dark brown sugar
2 tablespoons white wine vinegar
1 teaspoon honey
Salt and freshly ground pepper
2 porterhouse steaks, about 16 ounces each
1/2 pound cherry peppers
2 tablespoons olive oil, plus 2 tablespoons
Salt and freshly ground pepper
1 red pepper, cored and cut into quarters
1 yellow pepper, cored and cut into quarters
1/4 cup chopped flat-leaf parsley
1/4 cup Basil Vinaigrette, recipe follows

Steps:

  • Heat oil in a medium saucepan on side burners or grates of the grill. Add onion and garlic and cook until soft. Add red pepper flakes and cook for 1 minute. Add remaining ingredients, season with salt and pepper and cook until sauce has thickened, about 25 to 30 minutes.
  • Season steaks on both sides with salt and pepper. Grill until golden brown, about 4 to 5 minutes. Turn over and continue grilling for 4 to 5 minutes for medium-rare doneness. Baste with the sauce during the last few minutes. Remove from the grill and brush with more of the sauce. Let meat rest for 5 minutes then slice into 1/4-inch thick slices.
  • Preheat a grill. Preheat the oven to 400 degrees F. Toss the cherry peppers with 2 tablespoons of the olive oil in a bowl. Season with salt and pepper. Spread the peppers on a sheet pan and roast for 15 to 20 minutes, or until the skin is blistered. Set aside to cool slightly. Remove the stems and seeds from the cherry peppers and roughly chop.
  • Drizzle the red and yellow peppers with 2 tablespoons of the olive oil and season with salt and pepper. Place on the grill and cook until the skin is starting to blacken and blister. Remove from the grill and set aside to cool for 15 minutes. Roughly chop the peppers.
  • In a bowl, combine the cherry peppers, red and yellow tomatoes, parsley, and Basil Vinaigrette. Season, to taste, with salt and pepper. Serve.
  • Combine all ingredients and blend until smooth. Adjust seasoning with salt and pepper, to taste.

3 large onions (i like sweet ones) cut into nice pieces
1/2 c water, cold
1 bottle sweet baby rays bbq sauce (or your favorite)
3 clove garlic (chopped, fresh or pre-chopped)

Steps:

  • 1. pour water into crock pot add bbq sauce and stir to blend
  • 2. rough chop onions into nice pieces..they will shrink during the cooking process (I used 3 large..next time i might add 1 more we love onions) add onions to mixture in crock pot
  • 3. chop 3 fresh cloves of garlic or use 3 table spoons of pre chopped garlic and add to crockpot
  • 4. add your flank steak to the pot and make sure the steak is covered by the bbq sauce/water mixture (you can add alittle more water if needed)
  • 5. cook for 8 hrs on low stir..this will help the flank steak shred
  • 6. I served ours over mashed potatoes and served with fresh green beans..for left overs I toasted some onion rolls with a little butter in the oven and made shredded bbq beef sandwiches

FOR THE SUACE
1/2 tsp unsalted butter
1/2 medium onion, finely diced
1 clove garlic, minced
1 c ketchup
1/2 c 1/2 cup dark corn syrup
1/2 c apple cider or apple juice
2 Tbsp sugar
1/2 c lager-style beer
1 1/2 tsp yellow mustard
2 tsp lemon juice
1 1/2 tsp worcestershire sauce
1 1/2 tsp cayenne pepper
1 1/2 tsp teaspoons paprika
1/2 tsp salt
1/8 tsp pepper
FOR THE STEAK AND EGGS
4 new york strip steaks
salt and pepper to taste
1 Tbsp vegtable oil
8 grilled eggs

Steps:

  • 1. To make the sauce: In a medium saucepan over medium heat, melt the butter. Add the onion and garlic and saute until softened, about 3 minutes. Add the rest of the sauce ingredients; bring to a boil, then simmer until the sauce is reduced to 2 cups, about 30 minutes.
  • 2. Meanwhile, preheat a grill to medium-high. Season the steaks with salt and pepper and rub with the oil. Grill for 3 to 5 minutes per side for medium-rare. Let rest for 10 minutes.
  • 3. Grilled Eggs: Place a cast-iron skillet on the grill; add butter, oil or bacon drippings. Crack in eggs and season to taste (I like to use a blend of paprika, sugar and onion powder, plus salt and pepper). Cook until the edges are crisp but the yolks are still runny, 2-3 minutes. Plate the egg on top of steak and drizzle the bbq sauce on top of steak and eggs.
  • 4. *Tip: Any extra BBQ sauce that is left can be sealed in an air tight container in the fridge and can be used at a later date.

1 teaspoon brown sugar
1 tablespoon garlic powder
2 teaspoons onion powder
2 teaspoons five-spice powder
1/4 cup ketchup, low sodium if available
1/3 cup hoisin sauce, low sodium if available
1/4 cup soy sauce, low sodium
1 1/2 teaspoons chili powder, use your favorite type
1 teaspoon or more Sriracha sauce, according to taste
1 tablespoon honey
1 1/2 tablespoons fresh garlic, finely minced
1 tablespoon rice wine vinegar, unseasoned
1 1/2 tablespoons fresh ginger, finely grated
Salt and Pepper to taste

Steps:

  • Combine salt, chili powder, espresso powder, pepper, brown sugar, garlic powder, onion powder and five-spice powder thorougly in a small bowl. Coat the entire flank steak with the spice rub, wrap in plastic wrap and chill for 6-8 hours or overnight if desired. In a saucepan on stove, combine ketchup, hoisin, soy sauce, chili powder, sriracha sauce, honey, garlic, rice wine vinegar and ginger. Mix well and bring to a boil over medium heat. Taste and season with salt and pepper as desired; add liquid smoke according to your tastes. Allow sauce to simmer over medium-low heat for approximately 1/2 hour or until it reaches desired thickness. Divide sauce in half and reserve. Remove flank steak from refrigerator and allow to come to room temperature or close. Heat a gas grill over high heat for 10-15 minutes. Clean grill and turn both burners to medium-high heat. Take flank steak, scape off excess dry rub, spray with peanut oil and place on grill. Grill for 3-4 minutes or so per side for medium rare, brushing lightly with half of reserved BBQ sauce. Remove beef from grill, brush once again with reserved BBQ sauce not used during grilling and tent loosely with aluminum foil. Allow beef to rest for 10 minutes. Slice beef against the grain and on a bias into thin slices and serve with reserved BBQ sauce not used during grilling. Enjoy!

  • In a medium bowl, mix together teriyaki sauce, ginger, sesame oil, orange zest, vinegar, water, cayenne pepper, and garlic. Place steak in a shallow dish, and pour marinade over meat. Cover, and refrigerate for at least 2 hours.
  • Preheat grill for high heat.
  • Lightly oil the grate, and place meat on grill. Cook for 3 to 5 minutes per side. Test for doneness.

I got this recipe from an old mate of mine, Peter Howard. He is the resident chef on the Today Show here in OZ. I have worked with Peter for years and he has never led me astray with a 'crook' recipe yet, this is no exception. It is a little fiddly to prepare the Garlic Confit first, but once done you have a supply that will last a long time, and the flavour is superb.

4 (250 g) sirloin steaks, preferably 5 cm thick and marbled
ground black pepper
250 g butter, at room temperature
8 cloves confited garlic, peeled (see how to make in recipe below)
1 tablespoon chopped fresh thyme
1 tablespoon red wine vinegar
1 tablespoon lemon, zest of, finely grated
6 heads garlic
6 sprigs thyme
vegetable oil

Steps:

  • Make sure the steaks are trimmed of all fat that you want - leave some on as this is a source of great flavour.
  • Grind over with as much black pepper as you want and set to one side.
  • Make the butter, which is better done the night before use.
  • In a mixing bowl, mash all the ingredients together with a potato masher and then whisk to combine.
  • The finished butter can then be placed in a serving bowl or rolled in grease proof paper to a sausage shape.
  • The latter can be frozen and the former is best refrigerated.
  • Cook the steak in a hot pan or on the open slat of your very hot barbeque - leave to sit for 2 minutes.
  • Turn to cook on the other side.
  • Cook the meat a further 2 minutes - turn onto a spot which has medium heat and cook for 3 minutes on each side and your steak will be cooked medium.
  • If you want rare, cook it only 1 minute on each side and well done will need 5 minutes each side after the initial sealing of the meat.
  • Lift meat onto a warmed plate and leave to sit for 3 minutes.
  • Serve onto individual plates with the butter cut into rings, 3 cms thick; if using the bowl method, remove the butter from the refrigerator 20 minutes before use and serve with a spoon on the side.
  • The butter is delicious as it melts over the steak.
  • Serve with barbequed sliced potatoes and a green salad.
  • GARLIC CONFIT----------.
  • Trim about a third of the garlic head away and discard.
  • Pack the whole garlic into a saucepan, root down and cover with the oil.
  • Cook over really low heat for 1 hours - the garlic will brown slightly; the slower the cooking, the more flavour is released.
  • Remove from the heat, cool and then pack into a suitable storage container with the oil.
  • The garlic can be used wherever - great crushed and on heated ciabatta or in mayonnaises.
  • The oil is sensational for salad dressings and cooking.

A dish my aunt makes quite often. A great way to make a not so tender steak fork tender. Add some pepper flakes to give it some kick, if you like a little heat. Enjoy!

4 lb round - cut into serving sized pieces and i sprinkle with a little garlic powder
1 c ketchup
3 Tbsp brown sugar
1/4 c vinegar
3 clove garlic, minced
1/2 - 3/4 c green pepper, chopped - i used red, but like green better in this dish
1 medium onion, chopped
1/2 tsp each - salt & pepper
1 1/2 Tbsp worcestershire sauce
1/8 c molasses
1 Tbsp prepared mustard

Steps:

  • 1. Combine all ingredients, except steak in a sauce pan, boil for 5 minutes, stirring a few times. Place steak evenly into roasting pan. I season a little with garlic powder.
  • 2. Pour sauce evenly over steak and place in 325 degree oven for 1 hour and 15 minutes or until steak reaches desired tenderness. This steak is great the next day in sandwiches. I love serving this meat with mashed potatoes. For some reason it just goes well with.

2 tablespoons barbecue sauce
2 slices (1 oz each) provolone cheese, cut in half
2 cups Original Bisquick™ mix
1/2 cup boiling water
2 tablespoons milk
1 egg, beaten

Steps:

  • In 10-inch skillet, heat oil over medium-high heat. Cook bell pepper and onion in oil 3 to 4 minutes, stirring occasionally, until onion begins to soften. Sprinkle beef strips with salt and pepper; add to vegetables. Cook 5 minutes, stirring occasionally, until beef is thoroughly cooked. Stir in barbecue sauce; cook and stir 1 minute. Set aside.
  • Heat oven to 375°F. Spray cookie sheet with sides or 15x10x1-inch pan with cooking spray.
  • In small bowl, stir Bisquick mix and water until dough forms. Divide dough into 4 pieces; roll each into a ball. Keep covered with plastic wrap until ready to use.
  • On work surface sprinkled with additional Bisquick mix, roll 1 ball of dough into 6 1/2-inch round. On half of round, place 1/2 piece of cheese; top with rounded 1/3 cup beef mixture, leaving 1/2-inch border around edge. Brush edges with milk. Fold dough over filling and seal with tines of fork. Place on cookie sheet. Repeat with remaining dough, cheese and beef mixture.
  • Brush egg over tops of foldovers. Bake 20 to 25 minutes or until golden brown.

1 cup diced fresh pineapple
1/2 cup diced red bell pepper
1/2 cup diced hothouse cucumber
2 teaspoons rice vinegar, optional

Steps:

  • Combine Pineapple Salsa ingredients in small bowl. Set aside.

  • Place kabobs on rack in broiler pan so surface of beef is 3 to 4-inches from heat. Brush beef generously with some of reserved sauce mixture. Broil 7 to 9 minutes for medium-rare to medium doneness, turning once and brushing with remaining sauce mixture.
  • Season beef with salt, if desired. Serve kabobs topped with Pineapple Salsa.
