1/2 cup LEA & PERRINS Worcestershire Sauce
1/4 cup orange juice
2 Tbsp. olive oil
1 Tbsp. finely chopped jalapeño peppers
1/4 tsp. ground allspice
1 whole chicken (3-1/2 lb.), cut up

Steps:

  • Mix all ingredients except chicken until blended. Reserve 1/4 cup Worcestershire sauce mixture. Pour remaining Worcestershire sauce mixture over chicken in shallow dish; turn to evenly coat both sides of all chicken pieces.
  • Refrigerate 1 hour to marinate.
  • Heat grill to medium heat. Remove chicken from marinade; discard marinade.
  • Grill chicken 40 min. or until done (165°F), turning and brushing occasionally with reserved Worcestershire sauce mixture for the last 15 min.

¼ cup onion, finely chopped
1 clove garlic, minced
¾ cup ketchup
⅓ cup vinegar
1 tablespoon Worcestershire sauce
2 teaspoons brown sugar
1 teaspoon dry mustard
½ teaspoon salt
¼ teaspoon black pepper
¼ (5 ounce) bottle hot pepper sauce
1 (3 pound) chicken, cut into pieces

Steps:

  • Heat the oil in a skillet over medium heat and cook the onion and garlic until tender. Mix in ketchup, vinegar, Worcestershire sauce, brown sugar, dry mustard, salt, pepper and hot sauce. 1 large chicken (enough to serve 6)
water, to cover
1 tablespoon salt
1 teaspoon ground ginger
1 star anise or 1 pinch anise
2 teaspoons sugar
1 onion, peeled quartered
2 tablespoons soy sauce
1 tablespoon honey
1/2 cup pineapple juice

Steps:

  • Do ahead: Clean& truss chicken (Tie legs together and secure wings) and place in a large pot, cover with water.
  • Add salt, ginger, anisseed,onion& soy sauce.
  • Bring to a boil, reduce heat ans simmer for 1 hour.
  • Drain water from the chicken and leave it to cool completely.
  • Mix honey and pineapple juice in a cup.

2 garlic cloves , peeled finely
grated zest and juice of 1 lemon
2 tbsp Kashmiri spice mix, or good-quality curry powder
1 dried bird's-eye chilli , seeded and crushed, or a pinch of chilli flakes
3 tbsp olive oil
12 chicken thighs , bone in, skin on
2 large bunches each rosemary and thyme
2 branches fresh bay leaves

Steps:

  • Make the marinade. Smash the garlic with a little salt using a pestle and mortar. Add the lemon zest and juice, the spice mix, chilli, oil and a good grinding of black pepper. Mix to a paste. This can be done in a mini food processor.
  • Toss the chicken in the marinade and set aside while you light the barbecue. When the barbecue's hot, lay the bunches of herbs on the grid and put the chicken, skin side up, on top. Close the lid, if your barbecue has one, and cook the chicken on the smouldering herbs for about 10 minutes until the meat starts to colour. Turn the chicken and continue to cook for a further 20-30 minutes, turning as necessary, until it is slightly charred from the burnt herbs and cooked through to the bone.
