We made this for my brother and his wife when they were staying with us. They loved it, the pork was very moist and the flavours were great. DH cooked this on the grill it came it was impressive. We will be making this one again. Prep time doest not include time to marinade.

2 lbs lean pork loin, fat removed
6 garlic cloves, minced
2 jalapenos, minced
1/4 cup red wine vinegar
1/2 cup parsley
1/2 cup oregano
1 cup extra virgin olive oil
1 teaspoon kosher salt
1 teaspoon peppercorn
3 limes, juice of

Steps:

  • Mix garlic with jalapeños, vinegar, herbs and lime juice.
  • Whisk in the olive oil.
  • Add the salt and pepper corns.
  • Whisk and allow to stand for about 30 minutes.
  • Reserve half of the marinade.
  • Put the pork into a Ziploc bag and add the other half of the marinade to meat.
  • Marinade for about 4 hours but no more than 8 hours.
  • Remove the pork from the marinade and cook on a hot grill for about 1 hour or until internal temperature is about 160°F.
  • Allow to rest for twenty minutes before serving then,slice and use the reserved marinade to drizzle over the meat.

2 cups peanut shells, from roasted peanuts
2 pork loins, trimmed, about 1/2 pounds each
Kosher salt and freshly ground black pepper
Steak seasoning (recommended: Montreal) or other quality steak seasoning
Carrot pickled onion salad, recipe follows
2 cups ketchup
3/4 cup apple cider vinegar
1/4 cup tomato paste
3/4 cup peanut butter
2 tablespoons Dijon mustard
4 tablespoons ancho chili powder
4 tablespoons prepared barbecue sauce
3 ounces bourbon
1 small red onion, sliced thin
2 cups apple cider vinegar
3 tablespoons sugar
3 tablespoons kosher salt, plus more for seasoning
3 carrots, peeled and julienned
3 tablespoons chopped fresh parsley leaves
3 tablespoons chopped roasted peanuts
1 orange, zested and juiced
2 tablespoons peanut oil
Freshly ground black pepper

Steps:

  • Preheat the grill. Soak the peanut shells in water for 45 minutes.

9 oz sweet baby rays honey bbq sauce
