CROCK POT BBQ PORK CHOPS

Crock Pot BBQ Pork Chops image

This came out of desperation one day when I hadn't planned anything for dinner and only had half defrosted some pork chops. I just layered everything in the crockpot and 6 hours later we had dinner! It's very simple, very few ingredients and we thought it was very tender and tasty. I hope you enjoy!

Provided by Lezahjc

Categories     Pork

Time 5h5m

Yield 4 serving(s)

Number Of Ingredients 3

1 (16 ounce) bottle of your favourite barbecue sauce (I use Honey Smoke)
6 pork chops (you can use boneless or bone in)
seasoning (I use Garlic Plus by Club House)

Steps:

  • Turn crockpot on high and remove liner (if you can). Spread some BBQ sauce on the bottom of the crock.
  • Run each chop under some warm water.
  • Put 2 chops on the bottom of the crock. Put some BBQ sauce and seasonings on each chop Layer chops, sauce and seasonings. Add the remaining sauce over the top.
  • Return the crock to the pot, put on lid.
  • After about an hour, turn down to low. Cook for about 5-6 hours. If you used bone-in chops, be careful as the chops are very tender and will fall off the bone.
  • We usually have ours with mashed potatoes, or throw some potatoes in the oven and bake them for the last hour or so.
  • It would probably work well with rice too if you want.

GRILLED PUMPKIN BBQ-GLAZED PORK CHOPS

Grilled Pumpkin BBQ-Glazed Pork Chops image

Provided by Katie Lee Biegel

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 18

1 tablespoon olive oil
1 cup grated onion
2 cups ketchup
1 cup canned pumpkin puree
3/4 cup chicken broth
1/4 cup packed dark brown sugar
1/4 cup molasses or maple syrup
1/4 cup apple cider vinegar
1 tablespoon chili powder
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon pumpkin pie spice
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Four 1-inch-thick bone-in pork chops
Kosher salt and freshly ground black pepper
Vegetable oil, for brushing

Steps:

  • For the pumpkin bbq sauce: Heat the olive oil in a medium saucepan over medium heat. Add the onions and cook until tender and transluscent, 4 to 5 minutes. Add the ketchup, pumpkin puree, broth, sugar, syrup, vinegar, chili powder, Worcestershire, garlic powder, smoked paprika, pumpkin pie spice, salt and pepper and whisk well to combine. Bring to a low simmer. Reduce the heat to low and let cook until thickened, 20 to 30 minutes. If it begins to look too thick, add a few tablespoons of water or broth.
  • For the pork chops: Preheat a grill or grill pan for cooking over medium-high heat. Sprinkle the pork chops generously on both sides with salt and pepper. Brush the chops on each side with vegetable oil and grill, 4 minutes per side. Baste the pork chops on each side with the sauce and grill an additional minute per side to allow the sauce to caramelize. Serve the chops with extra sauce.

Spice-Rubbed Pork Chops with Sorghum BBQ Sauce image

Provided by Bobby Flay

Categories     main-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 19

1 1/2 cups ketchup
1/4 cup sorghum syrup
1/4 cup apple cider vinegar
2 tablespoons Dijon mustard
1 tablespoon ancho chile powder
1/2 habanero chile, finely chopped
Kosher salt and freshly ground black pepper
4 bone-in center-cut or porterhouse pork chops (at least 1-inch thick)
Canola oil, for brushing
2 tablespoons Bobby's Spice Rub for Pork, recipe follows
1/4 cup ancho chile powder
2 tablespoons ground coriander
2 tablespoons dry mustard
2 tablespoons paprika
2 tablespoons freshly ground black pepper
2 tablespoons kosher salt
1 tablespoon chile de arbol powder or cayenne pepper
1 tablespoon ground cumin
1 tablespoon dried oregano

Steps:

  • Combine the ketchup, sorghum, vinegar, mustard, ancho powder, habanero and some salt and pepper in a small saucepan. Bring to a simmer over medium heat and cook, stirring occasionally, until slightly thickened, about 10 minutes. Set aside about 1/2 cup for serving; keep warm.
  • Prepare a grill for medium-high indirect heat. Brush the top of the pork chops lightly with canola oil, and rub the oiled side with the spice rub. Let stand at room temperature for 30 minutes.

Brush the tops generously with barbecue sauce; shift them over to indirect heat and cook, covered, until a meat thermometer registers an internal temperature of 150 degrees F, about 5 minutes. Remove the chops from the grill, brush them with more of the sauce and let rest, loosely tented, for 10 minutes. Serve with the reserved BBQ sauce.
  • In a bowl, whisk together the ancho, coriander, mustard, paprika, pepper, salt, chile de arbol, cumin and oregano until blended. Store in a cool, dark place, tightly covered, for up to 6 months.
  • Yield: about 1 1/2 cups

Remove from the heat and let rest for at least 8 minutes. Smother the chops with some of the reserved sauce, slice into 1/2-inch wide pieces then drizzle with some more of the sauce. Serve with the apple and arugula salad.
  • For the salad: Peel, quarter, core and thinly slice the apples. Combine with the remaining salad ingredients in a large bowl.
  • For the dressing: Combine all of the ingredients in a mason jar and shake vigorously. Taste and adjust the seasonings, as needed.
  • Toss the salad with the dressing and serve immediately.

Yield Serves 8

Number Of Ingredients 20

Tamarind Glaze
1 tablespoon vegetable oil
1 medium yellow onion, chopped
3 cloves garlic
1 sprig fresh thyme
1/2 cup rum (añejo)
1 cup honey
1 cup tamarind pulp
3 cups beef stock
Brine
4 quarts water
1 cup sugar
1 cup salt
30 whole cloves
4 whole nutmegs, cracked
Pork Chops
8 center-cut pork chops, about 21/2 inches thick
Kosher salt and cracked black pepper
Granulated garlic, for seasoning
Dried thyme, for seasoning

Steps:

  • To make the glaze: Place the vegetable oil in a medium skillet over medium-high heat. Add the onion, garlic, and thyme and cook until the onion and garlic begin to brown, 7 to 10 minutes. Add the beef stock and continue cooking until the liquid is reduced by half. Strain through a sieve. Cover and refrigerate until ready to use.
  • To brine the pork chops: In a large stockpot, bring to a boil the water, sugar, salt, cloves, and nutmegs. Stir occasionally and cook until the sugar and salt have dissolved. Remove the brine from the heat and add the pork chops. Let cool for 30 minutes, then cover and refrigerate for 24 hours.
  • Prepare a hot grill for direct cooking, with a cool zone to one side.
  • Remove the pork chops from the brine, rinse with cold water, and pat dry. Season to your liking with salt, cracked black pepper, granulated garlic, and dried thyme.
  • Use long-handled tongs and a paper towel dipped in vegetable oil to lightly oil the grate, then place the pork chops over the fire, about 6 inches over the glowing coals. Cook for about 2 minutes on each side. Move the chops to the cool zone, cover the grill, and cook for 5 minutes. Turn, cover the grill, and grill until just cooked through, about 5 minutes more. The meat should register 145°F on a meat thermometer.
  • Transfer to a serving platter and allow the chops to rest for 10 minutes. While the meat is resting, warm the glaze. Serve the pork chops whole or sliced with the glaze.

HONEY MUSTARD BBQ PORK CHOPS

Honey Mustard BBQ Pork Chops image

These pork chops are great! I accidentally left them in the marinade for a day, a night, and the next day, and they were even better! They are very tender and tasty.

Provided by Jody Champion

Categories     Main Dish Recipes     Pork     Pork Chop Recipes

Time 2h30m

Yield 8

Number Of Ingredients 9

⅓ cup honey
3 tablespoons orange juice
1 tablespoon apple cider vinegar
1 teaspoon white wine
1 teaspoon Worcestershire sauce
2 teaspoons onion powder, or to taste
¼ teaspoon dried tarragon
3 tablespoons Dijon mustard
8 thin cut pork chops

Steps:

  • Place honey, orange juice, vinegar, wine, Worcestershire sauce, onion powder, tarragon, and mustard in a large resealable plastic bag. Slash fatty edge of each chop in about three places without cutting into the meat; this will prevent the meat from curling during cooking. Place chops in the plastic bag, and marinate in the refrigerator for at least 2 hours.
  • Preheat grill for high heat.
  • Lightly oil grill grate. Place chops on grill, and discard marinade. Cook chops for 6 to 8 minutes, turning once, or to desired doneness.

Tips:

  • Choose the right pork chops: Look for thick, bone-in pork chops that are at least 1 inch thick. This will help them stay moist and juicy during grilling.
  • Brine the pork chops: Brining the pork chops in a mixture of water, salt, and sugar helps to tenderize and flavor them. You can brine the pork chops for as little as 30 minutes or for up to 24 hours.
  • Season the pork chops generously: Before grilling, season the pork chops with a generous amount of salt, pepper, and your favorite spices. This will help to create a flavorful crust.
  • Grill the pork chops over medium heat: Grill the pork chops over medium heat for 8-10 minutes per side, or until they reach an internal temperature of 145 degrees Fahrenheit.
  • Let the pork chops rest before serving: After grilling, let the pork chops rest for 5-10 minutes before serving. This will help the juices redistribute throughout the meat, making them more tender and juicy.

Conclusion:

Pork chops are a delicious and versatile cut of meat that can be grilled, roasted, or fried. When grilled properly, pork chops are juicy, flavorful, and have a slightly smoky flavor. By following the tips in this article, you can grill pork chops that are perfect for any occasion. Whether you're cooking for a backyard barbecue or a special dinner, these pork chops are sure to be a hit.
