Time 1h15m

Yield 4 servings

Number Of Ingredients 17

4 cups fresh orange juice
3 tablespoons light brown sugar
3 tablespoons tamari
1 teaspoon Schezuan peppercorns
1/2 teaspoon coarsely ground black pepper
1/4 teaspoon kosher salt
2 whole star anise
One 2-inch piece fresh ginger, sliced into rounds
2 pound piece boneless beef short rib, sliced across the grain into 1/4-inch-thick pieces
1/4 cup canola oil
Kosher salt and freshly ground black pepper
Kosher salt
1/4 cup coarsely chopped salted peanuts
2 green onions, green and pale green part, thinly sliced
1/2 teaspoon light brown sugar
Pinch allspice
Pinch cinnamon

Steps:

  • For the orange-ginger glaze: Combine the juice, sugar, tamari, peppercorns, ground pepper, salt, anise and ginger in a saucepan. Cook over high heat, stirring occasionally, until reduced by half. Strain and cool.
  • For the grilled boneless short ribs: Toss the ribs with 1/2 cup of the glaze, reserving the remaining glaze. Set aside the ribs at room temperature for 30 minutes. Prepare the grill for direct grilling at medium-high heat. Remove the ribs from the glaze, shaking off the excess. Brush the ribs with the oil and sprinkle with salt and pepper. Grill the ribs until nicely charred and still pink in the middle, about 3 minutes each side. Brush the ribs occasionally with the reserved glaze.

GRILLED PORK CHOPS WITH ONION AND BELL PEPPER RELISH

Grilled Pork Chops with Onion and Bell Pepper Relish image

Provided by Food Network

Categories     main-dish

Time 1h30m

Yield 4 servings

Number Of Ingredients 11

2 pounds sweet red onion, peeled and thinly sliced
1 red bell pepper, ribs and seeds removed, thinly sliced
1 green bell pepper, ribs and seeds removed, thinly sliced
1 yellow bell pepper, ribs and seeds removed, thinly sliced

2 teaspoons balsamic vinegar
2 tablespoons brown sugar
1/2 cup ruby port wine
4 (8-ounce) bone-in pork loin chops, about 1 to 1 1/2 inches thick, trimmed

Salt and freshly ground black pepper

Steps:

  • To make the relish: In a straight-sided skillet, saute the onions and bell peppers in the oil until onions are translucent. Add the vinegar, sugar, and port wine, and cook at a very low heat until liquid evaporates. Onions and peppers should still be a little firm to the bite but sweet and caramelized. Set aside.

Place the chops on the grill and cook for 2 to 3 minutes on each side, using a inverted baking pan to keep chops covered during cooking. Move the chops to the right side of the grill and continue cooking over medium heat. Cook 4 minutes and then turn chops over to finish cooking, keeping covered for an additional 4 minutes. Cook to 150 degrees F internal temperature.
  • Serve with the relish.

Categories     Side Dish     Sauces and Condiments Recipes     Relish Recipes

Time 1h45m

Yield 4

Number Of Ingredients 7

2 yellow onions
1 red bell pepper, chopped
2 tablespoons chopped fresh flat-leaf parsley, or to taste
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or more to taste
3 tablespoons sherry vinegar
3 tablespoons olive oil

Steps:

  • Build a campfire or prepare a charcoal grill and allow the fire to burn until it has accumulated a bed of coals.
  • Nestle onions into the hot goals and pile coals up on the sides and on top. Roast until blackened and tender, about 15 minutes. Turn onions, rebury them, and cook until the onions begin to leak juice, another 10 to 15 minutes. A bamboo skewer inserted into the center should easily slide in. Place onions in a bowl, cover and allow to cool.
  • Place red pepper on the coals; cook, turning often, until charred, about 10 minutes.
  • Peel the blackened skin off the onions and scrape the charred black bits off the red pepper. Finely chop onions and red pepper. Combine in a bowl with parsley, and season with salt, black pepper, and cayenne pepper to taste.

  • Slice the onions thinly: This will help them to caramelize quickly and evenly.
  • Use a heavy-bottomed pan: This will help to distribute the heat evenly and prevent the onions from burning.
  • Cook the onions slowly: This will help them to caramelize and develop a rich flavor.
  • Add the vinegar and sugar: These ingredients will help to balance out the sweetness of the onions and create a tangy flavor.
  • Simmer the relish: This will help to thicken it and allow the flavors to meld together.
  • Season the relish to taste: Add salt, pepper, and any other spices you like.
