- In a large bowl, mix the balsamic vinegar, soy sauce, and half the garlic. Add the mushrooms and gently toss the mushrooms so they are coated in the marinade. Set aside on your counter for 30 minutes.
- In a small saucepan melt the butter and add the remaining garlic and a pinch of salt.
- Oil your barbecue grill and preheat to medium. Skewer the mushrooms on kebab sticks. (See notes.)
- Grill the mushrooms for 5 minutes per side. When you flip them over, it is easiest to use two pairs of tongs. Set the grilled mushrooms on a plate and drizzle the garlic butter over the top. Serve immediately.

- In a shallow baking dish, whisk together the balsamic vinegar, olive oil, soy sauce, rosemary, garlic powder, black pepper, and cayenne. Taste and adjust seasonings if you like. Add the mushrooms and turn to coat. Let sit for 5 minutes on one side, then flip and let sit 5 additional minutes. While the mushrooms marinate, prep the grill and anything you'd like to serve with them. You can let them sit for up to 30 minutes, so feel free to take your time-the longer they sit, the more intense the flavor will be.
- Heat a grill or a large skillet over medium heat (about 350 to 400 degrees F). Brush the grill with oil to prevent sticking. Remove the mushrooms from the bowl, shaking off any excess marinade and reserving the marinade for basting. Cook on each side for 3-4 minutes, or until caramelized and deep golden brown. Brush the remaining marinade over the mushrooms several times as they cook.
- To serve, top the portobello mushrooms with the avocado sauce or any topping you like.

- Combine the mushrooms, garlic, lime juice and olive oil in a bowl.
- Season the mushroom mixture with salt and pepper and set aside to marinate for 20 minutes.
- To make the spice mix, combine all the spices together.
- Toss the spices through the mushroom mixture and allow to stand for 10 minutes.
- Place the mushrooms on a preheated BBQ plate (medium heat) & BBQ and grill, carefully turning mushroom's frequently, until the mushroom are a golden brown colour.
- Remove and serve.
BBQ BACON MUSHROOMS
This is a recipe that I CRAVE! We have eaten them as a side, main dish, and appetizer. They can also be made on the grill or in the oven. We make our own bbq sauce so feel free to use your favorite sauce in the recipe. Don't be afraid of the grape jelly, it just adds a touch of sweetness and also aids in helping the bbq sauce really carmelize onto the mushrooms. I have found that it helps to go for the good bacon, splurge a bit and you'll be happy you did. If cooking these on the grill you prepare them the same way, however my boyfriend is the one who does the grilling, so grill time would be an estimation from me. - If cooking in oven, preheat to 400.
- Pull the stems off the mushrooms. Set mushroom caps aside.
- Mix the bbq sauce and grape jelly, tabasco, and any other seasonings you like together and set aside.
- Cut the bacon pieces in half (not long ways) right down the middle.
- Wrap a half of bacon around a mushroom, take the other half and wrap around the rest of the mushroom until it is completely covered with bacon. Secure with a toothpick or wooden skewer. Dip in bbq mixture until well coated.
- Repeat with remainder of mushrooms and bacon.
- If baking in oven, place mushrooms on a broiler pan and cook for about 1 hour to 11/2 hours, depending on how crispy you like your bacon. Turn the mushrooms every 30 minutes, coating with any remaining bbq sauce.
- Remove and let cool before eating.

QUICK BBQ GARLIC MUSHROOMS
This is a technique I came up with quite accidentally and it's not so much the ingredients listed below that matter but the technique that gives a quick way to cook mushrooms on a barbecue or in a pan that have that nice moist texture throughout just like they were slowly cooked in an oven. I'm sure all the lovely stuffed garlic mushroom recipes on 'zaar will work well this way!

- For the mushrooms field mushrooms are best but make sure they are nice and round in shape rather than flat. Remove the stems.
- Stuff the mushrooms full of garlic, don't be scared because anyone that doesn't like you with garlic breath probably didn't like you to begin with!
- Drizzle some olive oil over each mushroom.
- Place on a lightly oiled barbecue plate at medium temperature for a minute or two with the cup of the mushroom facing up. Check occasionally and cook until it is lightly browned on the bottom.
- Flip the mushroom over and cook a further two minutes on the other side.
- After two minutes flip again, scooping any lost garlic back into the cup of the mushroom (very important!).
- Now use a pair of tongs and tap each mushroom lightly in around ten places around the outside area. This is the trick and you should see the juices rising to the top and is what gives a juicy rather than dry flavor.
- Cook around another five minutes depending on barbecue temperature. Sometimes I like to turn the plate off at this point and leave for slowly cook for around ten minutes instead.
