KOREAN MEATBALLS AND NOODLES

Korean Meatballs and Noodles image

This kalbi meatball recipe, adapted from the cookbook "Koreatown," is easy and quick enough to consider for midweek dinner. It offers the sweetly peppered, deeply satisfying flavors typical of many Korean dishes, and gives new personality to everyday spaghetti and meatballs. My favorite utensil for making ground meat mixtures, by the way, is an old-fashioned potato masher. The book suggests wrapping the meatballs in lettuce, but I tossed them with noodles in a sauce that exploited the brown bits left in the cooking of the meatballs.

Time 45m

Yield 4 servings

Number Of Ingredients 15

1 pound ground beef, preferably short rib and chuck
1 1/2 tablespoons honey
1 teaspoon ground black pepper
1 tablespoon Asian sesame oil
1 tablespoon rice vinegar
1/3 cup chopped peeled Bosc or Asian pear
1/4 cup chopped onion
1/2 tablespoon grated ginger
3 tablespoons soy sauce
2 cloves garlic, minced
1 large egg, beaten
1/3 cup dry bread crumbs, preferably whole wheat
6 ounces udon noodles or linguine
2 tablespoons gochujang, or ketchup seasoned with 1 teaspoon hot sauce
3 scallions, trimmed and slant-cut

Steps:

  • Heat oven to 450 degrees. Line a rimmed baking sheet with foil. Place beef in a bowl.
  • Combine honey, black pepper, sesame oil, vinegar, pear, onion, ginger, soy sauce and half the garlic in a food processor or blender and whirl until well blended. Mix with beef. Add egg and bread crumbs and mix again. Form into 1 1/2-inch balls and arrange on the baking sheet with a bit of space between them. Place in the oven and bake 20 minutes.
  • While meatballs bake, bring a large pot of water to a boil. Add noodles and boil 5 minutes for udon, about 8 minutes for linguine. Reserve 2/3 cup of the pasta water, then drain pasta.
  • When meatballs are done, transfer them to a bowl and scrape pan juices into a sauté pan. Heat on medium, add remaining garlic and cook briefly until it starts to color. Whisk in gochujang, then pasta water. Simmer about 3 minutes, until sauce reduces and starts to thicken. Reduce heat to low, add noodles and toss in sauce. Add meatballs and mix gently. Transfer to a warm serving dish or individual bowls, scatter with scallions and serve.

Provided by Keyairahs Ama

Categories     Meat

Time 2h

Yield 4-6 serving(s)

Number Of Ingredients 11

1 1/2 lbs ground chuck
1 tablespoon skim milk (to moisten, use more or less as needed)
3/4 cup old-fashioned oatmeal
1 1/2 teaspoons salt
3 tablespoons onions (minced)
3 tablespoons white vinegar
2 tablespoons sugar
1/2 cup water
1 cup ketchup
1 teaspoon Worcestershire sauce
1 (16 ounce) bag egg noodles

Steps:

  • Mince onion.
  • Combine hamburger, onion, salt and oatmeal. Add milk as needed for hamburger mixture to hold shape. Make 3/4 - 1 inch meatballs with all of mixture. Place in oven safe casserole dish (I use throw away pans because the BBQ sauce can be hard to get off.).
  • Sauce:.
  • Mix vinegar, sugar, water, ketchup and Worcestershire sauce.
  • Pour mixture over meatballs.
  • Bake in oven at 375°F for 15 - 20 minutes. Reduce heat to 350°F for 70 - 75 minutes.
  • Start cooking egg noodles about 30 minutes before meatballs are done. Serve meatballs over noodles.

Tips:

  • Choose the right meatballs: For the best results, use a combination of ground beef and pork. This will give the meatballs a juicy and flavorful texture.
  • Make sure the meatballs are cooked through: To ensure that the meatballs are cooked through, cook them over medium heat for about 10-12 minutes, or until they reach an internal temperature of 165°F.
  • Use a good quality BBQ sauce: The BBQ sauce is what will give the meatballs their flavor, so make sure you use a sauce that you like. If you don't have any BBQ sauce on hand, you can make your own by combining ketchup, brown sugar, vinegar, and spices.
  • Don't overcook the egg noodles: Egg noodles are very delicate, so it's important not to overcook them. Cook them according to the package directions, or until they are just tender.
  • Serve the meatballs and egg noodles immediately: This dish is best served immediately, while the meatballs are still hot and the egg noodles are still tender.

Conclusion:

BBQ meatballs with egg noodles is a classic comfort food dish that is easy to make and always a crowd-pleaser. By following these tips, you can make sure that your BBQ meatballs and egg noodles are delicious and perfect every time.
