Steps:

  • In a medium-sized bowl, mix the ground beef, onion, parsley, bread crumbs, egg, garlic, oregano, basil, salt, and pepper until combined. Set aside.
  • Preheat oven to 400°F (200°C).
  • Line two empty ice trays with bacon, overlapping each piece to cover the tray completely.
  • Press the bacon down into each round with two fingers.

These really are so delicious, folks. They're almost like little "meatloaf balls", with a lot more flavorful surface area than a big slice of meatloaf. And the sauce is just a classic sweet/sour ketchup concoction and it makes you think of Grandma. My kids love this dish, which is a miracle. And they're delicious warmed up the next day and placed on a toasted sandwich bun with melted mozzarella on top. Yikes. *Note that these meatballs are not in the same category of regular Italian meatballs that would go in Spaghetti and Meatballs-those have more of a breadcrumb/parsley/Parmesan flair. These are more in the comfort food/meatloaf category. If you'd like to serve them with pasta, regular egg noodles tossed in a tiny bit of melted butter would be divine.

1 1/2 pounds lean pork meat, such as loin, trimmed of any gristle or membranes and cut into small dice
1/2 cup finely chopped shallots
3 tablespoons minced garlic
4 teaspoons sugar
2 1/2 tablespoons Vietnamese fish sauce (Nuoc Nam)
1 1/4 teaspoons freshly ground black pepper
5 tablespoons short-grain glutinous rice, such as sushi rice
4 ounces pork fat, cubed
Vegetable oil

Steps:

  • In a small bowl combine the pork, shallots, garlic, sugar, fish sauce and pepper. Stir to combine well, cover, and refrigerate for at least 1 hour and up to overnight. Transfer to the freezer for 30 minutes, or until the mixture is partially frozen.
  • Place the rice in a small skillet and heat over medium-high heat, stirring constantly, until rice is toasted, golden brown and fragrant. Transfer to a plate to cool. When cool, place rice in a coffee grinder and process to a fine powder. Measure 3 tablespoons of the powder and set aside. Save any remaining powder for another purpose or discard.
  • Transfer the partially frozen meat mixture to a food processor and process to a completely smooth but stiff paste. Add the pork fat to the processor and process until smooth or finely chopped. Add the roasted rice powder and pulse several times to combine the mixture. Do not over process or the mixture will become sticky.
  • Preheat a grill to medium-low.
  • Transfer the meat mixture to a small bowl. Lightly oil your hands. Divide meat mixture into heaping 1 1/2 tablespoonfuls and roll each into a smooth ball. Recoat your hands with oil, as necessary. Thread the meatballs onto the bamboo skewers, fitting as many as you can on each skewer.
  • Coat the grill lightly with oil and grill the skewered meatballs, turning occasionally, until cooked through, 20 to 30 minutes. Serve warm or at room temperature.

½ cup bread crumbs
2 small onions, chopped
1 tablespoon curry powder
1 tablespoon dried Italian seasoning
1 egg, beaten
1 clove garlic, minced
½ cup milk
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon margarine
2 small onions, chopped
¾ cup ketchup
½ cup beef stock
¼ cup steak sauce
½ cup Worcestershire sauce
2 tablespoons white vinegar
2 tablespoons instant coffee granules
½ cup packed brown sugar
3 tablespoons lemon juice

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). In a medium bowl, mix together the ground beef, bread crumbs, 2 onions, curry powder, Italian seasoning, egg, garlic, salt and pepper. Gradually mix in the milk until you have a nice texture for forming meatballs. You may not need all of the milk. Form the meat into balls slightly smaller than golf balls. Place them in a greased baking dish.
  • Bake the meatballs for 30 minutes in the preheated oven. Once the meatballs are in the oven, start making the sauce straight away.
  • Melt the margarine in a saucepan over medium heat. Add the remaining onions, and cook until browned. Bring to a boil over medium heat, and simmer, stirring occasionally, until the meatballs are done.
  • Remove the meatballs from the oven, and drain any excess grease. Pour the sauce over them, and return to the oven. Bake for an additional 30 minutes.
  • These meatballs taste even better after they have been left to rest for a while to soak up the sauce. I usually make the recipe at lunchtime and let it cool. 1 can (5 ounces) evaporated milk
1/3 cup chopped onion

¾ cup dark brown sugar

1 egg
3 tablespoons onions, grated
1 (1 ounce) package dry ranch dressing mix
1 cup ketchup

3/4 cup cola
1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
1 teaspoon seasoning salt

1 tablespoon skim milk (to moisten, use more or less as needed)
3/4 cup old-fashioned oatmeal
1 1/2 teaspoons salt

  • Mince onion.
  • Combine hamburger, onion, salt and oatmeal. Add milk as needed for hamburger mixture to hold shape. Make 3/4 - 1 inch meatballs with all of mixture. Place in oven safe casserole dish (I use throw away pans because the BBQ sauce can be hard to get off.).
  • Sauce:.
  • Mix vinegar, sugar, water, ketchup and Worcestershire sauce.
  • Pour mixture over meatballs.
  • Bake in oven at 375°F for 15 - 20 minutes. Reduce heat to 350°F for 70 - 75 minutes.
