Yield 36 poppers

Number Of Ingredients 7

18 fresh Jalapenos
one 8-oz pkg Cream Cheese
1/2 cup grated Cheddar Cheese
1 Green Onion, sliced
18 slices thin Bacon, cut into halves
bottled Barbecue Sauce
toothpicks

Steps:

  • Preheat oven to 275 F. Begin by cutting the jalapenos in half lengthwise. Try to keep their stems intact. They look prettier that way. With a spoon, scrape out the seeds and light-colored membrances. Mix cream cheese, cheddar cheese and onion. Stuff each hollowed jalapeno half with the cheese mixture. Wrap the bacon slices araound each half, covering as much of the surface as you can. Be careful not to stretch the bacon too tightly around the jalapeno, as the bacon will contract as it cooks. Brush the surface of the bacon with your favorite barbecue sauce. Chutney or apricot jelly works well too! Secure the jalapenos with toothpicks and pop them in the oven for 1 hour, or until the bacon is sizzling.

Notes from the book: Unless you're prepared to become instantly addicted, do NOT place two of these on your hamburger. I mean it. Don't. There will be no turning back then. For a simpler version omit the cheddar and green onion from cream cheese You can also cut sliced peaches or pineapple into small bits and press them into...

Number Of Ingredients 8

18 fresh jalapenos
one 8 oz. pkg. cream cheese
1/2 cup grated cheddar cheese
1 green onion, sliced
18 slices thin bacon, cut into halves
bottled barbecue sauce
toothpicks
rubber gloves or plastic bags for working with jalapenos

Steps:

  • 1. Preheat oven to 275. Cut jalapenos in half lengthwise, using plastic bags or rubber gloves. Try to keep the stems intact, as they look prettier that way.
  • 2. With a spoon, scrape out the seeds and light colored membranes. Remember, the heat comes from the seeds and membranes so if you can handle the sizzle, leave some of them intact. In a bowl, mix the cream cheese cheddar cheese, and chopped green onion. Mix gently. You don't have to use an electric mixer, but if you want to, you can (I do, as I'm lazy)
  • 3. Stuff each hollowed jalapeno half with the cheese mixture. Wrap bacon slices around each half, covering as much of the surface as possible. Be careful not to stretch the bacon too tightly around the jalapeno, as the bacon will contract as it cooks.
  • 4. Brush surface of bacon with your favorite barbecue sauce. Chutney or apricot jelly works well, too. Secure jalapenos with toothpicks and pop them in the oven for an hour or til bacon is sizzling. Serve hot or room temperature and watch them disappear.
  • 5. Hint: Make three times more than you need. Trust me. Poppers can be assembled up to a day ahead of time and kept in the fridge before cooking. Or, they can be fully cooked and frozen in plastic bags til you need them. Just thaw and warm up in the oven before serving.

Tips:

  • Choose the right jalapeños: Look for large, firm jalapeños with smooth skin and no blemishes. Avoid jalapeños that are too small or have wrinkles, as these are likely to be more spicy.
  • Wear gloves when handling jalapeños: The capsaicin in jalapeños can irritate your skin, so it's important to wear gloves when handling them. If you do get capsaicin on your skin, wash it off with soap and water immediately.
  • Remove the seeds and ribs from the jalapeños: This will help to reduce the spiciness of the poppers. You can use a spoon or a paring knife to remove the seeds and ribs.
  • Stuff the jalapeños with your favorite fillings: There are many different fillings that you can use for jalapeño poppers, such as cheese, cream cheese, meat, and vegetables. Get creative and experiment with different flavors and textures.
  • Bake or fry the jalapeño poppers: You can either bake or fry the jalapeño poppers. If you're baking them, preheat your oven to 400 degrees Fahrenheit. If you're frying them, heat a large skillet over medium heat and add enough oil to cover the bottom of the skillet.
  • Serve the jalapeño poppers with your favorite dipping sauce: There are many different dipping sauces that you can serve with jalapeño poppers, such as ranch dressing, blue cheese dressing, or sour cream. You can also make your own dipping sauce by combining your favorite ingredients.

Conclusion:

Jalapeño poppers are a delicious and easy-to-make appetizer that is perfect for any occasion. They are a great way to add a little spice to your next party or gathering. With so many different fillings and dipping sauces to choose from, there's sure to be a jalapeño popper recipe that everyone will enjoy.
