2 cups plus 2 tablespoons lowfat plain yogurt
2 cups frozen mango chunks
3 tablespoons honey
1/4 cup plus 1 tablespoon apple cider vinegar
1/4 cup golden raisins
2 tablespoons olive oil, plus more for brushing
1/4 teaspoon cayenne pepper
5 sun-dried tomatoes (not packed in oil)
2 small cloves garlic, finely chopped
4 ears corn, shucked
8 boneless, skinless chicken thighs, trimmed (about 1 1/2 pounds)
Kosher salt
6 cups mixed salad greens
2 medium carrots, thinly sliced

  • To make the smoothies, combine 2 cups of the yogurt, 2 cups ice, 1 cup of the mango and all of the honey in a blender, and blend until very smooth. Divide among four glasses and refrigerate until ready to serve. Rinse out the blender.

1 cup sliced radishes

1 tablespoon apple cider vinegar
1 tablespoon yellow mustard
1 teaspoon sugar
1/2 teaspoon garlic salt

1 whole chicken
2 tablespoons chili powder

Steps:

  • For the macaroni salad: Bring a large pot of salted water to a boil. Cook the macaroni in the boiling water until al dente according to the package instructions. Drain and let cool.
  • Toss the macaroni with the tomatoes, radishes, bell peppers, scallions and cucumbers in a large bowl. In a small bowl, whisk the mayonnaise with the vinegar, mustard, sugar and garlic salt.   • In a small bowl, combine the chili powder, salt, garlic powder and black pepper. Season both sides of the chicken with the spice mixture. Use a pastry brush to brush the chicken with the canola oil.
  • Place the chicken skin-side down on the grill. Cover and let cook 10 minutes. Flip the chicken and reduce the heat to medium low. Cover and cook another 10 minutes. Flip the chicken again for 10 more minutes, then flip again and cook until the chicken reaches an internal temperature of 165 degrees F, an additional 10 minutes.
  • Use a pastry brush to coat each side of the chicken with the barbecue sauce and cook just to let the sauce caramelize, about 2 minutes per side. Tent with foil and let stand 5 minutes. Cut the chicken into pieces--it will be falling apart by this time! Serve with more barbecue sauce on the side and the lime wedges.

1 3/4 pounds skinless, boneless chicken thighs (about 6), halved
3 tablespoons extra-virgin olive oil
1 teaspoon chili powder
2 tablespoons plus 2 teaspoons
1/4 cup ketchup
2 teaspoons packed dark brown sugar
1 teaspoon Worcestershire sauce
1 stalk celery, finely chopped
1 scallion, sliced

Steps:

  • Spread the potatoes in an Instant Pot. Add 2/3 cup hot water and a big pinch each of salt and pepper. Fit a rack on top. Toss the chicken with 1 teaspoon olive oil and the chili powder; season with salt and pepper. Arrange the chicken thighs on the rack.
