BBQ CHICKEN & PASTA CASSEROLE

BBQ Chicken & Pasta Casserole image

This casserole is the very first dish which I concocted. I threw this together many years back with my boys in mind. I used ingredients which I knew they would like, but made it healthy to satisfy me. They loved it, as did my husband, and they still request it today. It's great with Italian or French bread!

Categories     One Dish Meal

Time 1h15m

Yield 4-6 serving(s)

Number Of Ingredients 7

1 (12 ounce) box tri-color spiral pasta
1 cup honey barbecue sauce
1 (14 ounce) can low sodium chicken broth
1 (14 1/2 ounce) can French style green beans, drained and rinsed
1 1/2 lbs boneless skinless chicken breasts
1 1/2 cups shredded mozzarella cheese
1 teaspoon garlic powder or 1 teaspoon minced garlic

Steps:

  • Pre-heat oven to 350 degrees.
  • Cook the chicken breasts in a lightly oiled skillet on medium heat for approximately 6-8 minutes on each side or until chicken is no longer pink inside; cool for 5 minutes; then dice.
  • At the same time, cook the pasta according to box directions. When done, drain the pasta and place in a large, greased baking dish. Add the chicken and remaining ingredients to the pasta. Mix well.
  • Cover and bake for 45 minutes. Stir and enjoy!

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the final dish. Use the best quality chicken, vegetables, and spices that you can find.
  • Cook the chicken thoroughly: Chicken should be cooked to an internal temperature of 165 degrees Fahrenheit to ensure that it is safe to eat. Use a meat thermometer to check the temperature before serving.
  • Don't overcook the chicken: Overcooked chicken will be dry and tough. Cook it just until it is cooked through to maintain its tenderness and juiciness.
  • Use a variety of vegetables: This will add flavor, color, and nutrients to the dish. Some good choices include broccoli, carrots, celery, onions, and potatoes.
  • Season the dish well: Use a combination of salt, pepper, and other spices to taste. You can also add herbs, such as rosemary, thyme, or oregano, for extra flavor.
  • Cook the casserole covered: This will help to keep the chicken and vegetables moist. Remove the cover during the last 10 minutes of cooking to allow the top of the casserole to brown.
  • Serve the casserole hot: This is when it will be at its best. You can garnish it with parsley, chives, or other fresh herbs before serving.

Conclusion:

BBQ Chicken Casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover chicken. With its tender chicken, flavorful sauce, and variety of vegetables, this casserole is sure to be a hit with the whole family.
