VANILLA BAVARIAN CREAM WITH CARAMELIZED APPLES AND ALMOND CRUMBLE

VANILLA BAVARIAN CREAM WITH CARAMELIZED APPLES AND ALMOND CRUMBLE image

Categories     Dessert

Yield 4

Number Of Ingredients 18

Bavarian cream
1 tbsp gelatin
1/4 cup cold water
1 1/2 cup hot milk
4 egg yolks
1/2 cup sugar
1 vanilla bean
1 cup 35% cream, whipped
Caramelized apples
3 tbsp unsalted butter
1/2 cup brown sugar
4 Cortland apples, peeled, cored and cut into thin wedges
Almond Crumble
1/2 cup toasted almonds
1/2 cup all-purpose unbleached flour
1/4 cup brown sugar
1/4 tsp salt
1/4 cup cold unsalted butter, cut into small cubes

Steps:

  • Bavarian cream Pour the water into a small bowl. Sprinkle on the gelatin and let soften for 5 minutes. Set aside. With the tip of a knife, split the vanilla bean lengthwise. Scrape out the seeds. In a saucepan , off the heat, whisk the sugar and egg yolks until smooth. Slowly add the hot milk, whisking constantly. Add the vanilla seeds and pod. Cook over low heat, stirring constantly with a wooden spoon and scraping the bottom and corners of the saucepan, until the mixture thickens enough to coat the back of the spoon, about 15 minutes. Add the gelatin and stir until completely dissolved. Let cool partially. Refrigerate until cool. Using a whisk, gently fold the whipped cream into the vanilla mixture and stir until smooth. Spoon the Bavarian cream mixture into eight 250-ml (1-cup) mason jars (approximately 125 ml/1/2 cup per jar). Cover and refrigerate until firm, about 3 hours. Caramelized apples In a large skillet over medium-high heat, melt the butter with the brown sugar. Add the apple slices and cook until translucent and golden-brown. Transfer to a bowl. Let cool slightly, then refrigerate until completely cool, about 1 hour. Almond Crumble With the rack in the middle position, preheat the oven to 180°C (350°F). In a food processor, coarsely chop the almonds with the flour, brown sugar and salt. Add the butter and pulse briefly until the mixture resembles coarse sand. Spread the mixture on a cookie sheet. Bake for 10 minutes. Stir and continue baking for about 3 minutes more. Let cool completely. Note: Use the leftover almond crumble as a topping for fresh fruit or ice cream. Assembly Spoon the chilled apple slices onto the set Bavarian creams. Garnish with the crumble (about 30 ml/2 tablespoons per jar). Close the jar lids.

Tips:

  • Use high-quality vanilla beans for the best flavor. If you don't have vanilla beans, you can substitute 1 teaspoon of vanilla extract.
  • Toast the almonds before coating them in sugar. This will help them to develop a deeper flavor and a more golden color.
  • Use a heavy-bottomed saucepan to make the sugar syrup. This will help to prevent the sugar from burning.
  • Stir the sugar syrup constantly until it reaches the desired consistency. If you don't stir the syrup, it may crystallize.
  • Coat the almonds in the sugar syrup as soon as it is ready. This will help the almonds to absorb the syrup and develop a shiny coating.
  • Spread the almonds out on a parchment paper-lined baking sheet in a single layer. This will help them to dry evenly.
  • Let the almonds cool completely before storing them. This will help to prevent them from sticking together.

Conclusion:

Bavarian vanilla almonds are a delicious and easy-to-make treat. They are perfect for snacking on, adding to trail mix, or using as a topping for desserts. With just a few simple ingredients, you can make these almonds at home in no time. So next time you're looking for a sweet and crunchy snack, give Bavarian vanilla almonds a try.
