7 small yellow squash
1 medium onion, diced
1/2 c cream
3 Tbsp butter
1/4 c grated parmesan cheese
3/4 c crushed saltine crackers

Steps:

  • 1. Boil squash in salt water until tender. Drain and mash.
  • 2. Saute onion in butter. Add cream, cheese and cracker crumbs. Mix with squash.
  • 3. Pour into a 1-1/2 quart buttered casserole dish. Top with additional crumbs and dot with butter. Bake at 350 for 30 minutes.

3 pounds yellow summer squash, cut into 1-inch cubes
½ cup dry bread crumbs
½ cup chopped onion
2 eggs
¼ cup butter, melted
1 tablespoon white sugar
1 teaspoon salt
½ teaspoon black pepper
¼ cup butter, melted
¼ cup dry bread crumbs

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish.
  • Place the squash in a large saucepan, cover with water, and boil until soft, about 15 minutes. Drain the squash well, place in a large mixing bowl, and mash until slightly chunky. 8 yellow squash, cut in half

4 cups Baby Spinach
